    • Persian cucumbers
    • Cherry tomatoes
    • Red onion
    • Kalamata olives
    • Feta cheese
    • Fresh parsley
    • Fresh mint
    • Extra virgin olive oil
    • Fresh lemon juice
    • Red wine vinegar
    • Dijon mustard
    • Garlic
    • Salt

    🔪 How to Make Shirazi Salad

    How to Make Mediterranean Salad Dressing

    Add all of the dressing ingredients to the bowl of a mini chopper or food processor.

    Blend until everything is fully combined and emulsified, then set aside while you assemble the salad.

    Tip: If you don't have a mini chopper or food processor, you can use an immersion blender. If you don't have either, you can add everything except the olive oil to a bowl and slowly add in the olive oil while whisking.

    Slice cucumbers into half moons.

    Slice tomatoes and kalamata olives in half as well, then chop your red onion, parsley and mint.

    Tip: If you can't find the smaller (Persian) cucumbers, you can use English cucumbers and just quarter it. These are best to use in this salad, since the skins are so thin, you won't have to peel them.

    In a large mixing bowl, add in the cucumbers, tomatoes, olives, red onion, mint and parsley.

    Tip: The mint might sound odd, but trust me when I tell you, it's absolutely delicious in this salad! If you happen to not like mint, you can certainly omit it.

    Toss to combine.

    Pour the dressing over the top.

    Add in the feta cheese and gently toss, just until combined.

    Chill in the fridge for 1 hour before serving.

    Can I Make Cucumber Salad in Advance?

    Absolutely! Many people prefer to make it ahead several hours, up to a day in advance giving the flavors extra time to meld together.

    It’s important to know that sliced cucumbers release water the longer they sit, which can make your salad watery.

    How Do you Make Cucumber Salad Less Watery?

    If you’re making it several hours ahead of time, the best way to prevent that, is to slice the cucumbers and sprinkle them with a little salt. Place them in a colander for half an hour, so they can release some of their moisture.

    How Long Does Cucumber Salad Last?

    3-4 days in the fridge is best, anything beyond that and the salad will become more soggy and appetizing.

    • Meat: Leftover Grilled Chicken, Cajun Shrimp, or Grilled Skirt Steak are all great options.
    • Herbs: I used fresh mint, but feel free to try fresh basil, thyme or dill.
    • Cheese: You may have heard that "feta is betta" but creamy goat cheese or tangy parmesan cheese works great also.
    • Other veggies: This salad works wonderful with many vegetables. Bell peppers, Marinated Mushrooms, roasted red peppers, sundried tomatoes or even grilled eggplant can be added.

    Is Shirazi Salad Good for You?

    It sure is. This traditional Mediterranean salad features a wonderful combination of fresh vegetables, and other ingredients that are high in fiber, vitamins, and minerals.

    As an example, cucumbers are a great source of vitamins K, and C, as well as potassium. The tomatoes that are added are high in vitamin C, potassium, and lycopene. Olives contain plenty of healthy fats and have beneficial antioxidants, while feta crumbles contain protein and calcium.

    Do You Take the Skin off a Cucumber for a Salad?

    This is truly a personal preference. The skin has beneficial nutrients such as fiber, vitamin C, and beta-carotene.

    Some people may prefer to peel the skin if the texture bothers them. If you're using English or Persian cucumbers like I did, the skin adds wonderful crunch to the salad without being too tough or waxy like larger garden style cucumbers.

    Ingredients
     

    For the Salad

    • 2 pounds Persian cucumbers, halved
    • 7 ounces cherry tomatoes, halved
    • ⅓ red onion, diced
    • ⅓ cup Kalamata olives, halved
    • ⅓ cup feta cheese, crumbled
    • 1 ½ tablespoons fresh parsley, chopped
    • 1 tablespoon fresh mint, chopped

    For the Dressing

    • ¼ cup extra virgin olive oil
    • 3 tablespoons fresh lemon juice
    • 2 tablespoons red wine vinegar
    • 1 teaspoon dijon mustard
    • 1 clove garlic, grated
    • ¼ teaspoon salt
    • ¼ teaspoon ground black pepper

    Instructions
     

    • Add all of the dressing ingredients to the bowl of a mini chopper or food processor.
    • Blend until everything is fully combined and emulsified, then set aside while you assemble the salad.
    • Slice cucumbers into half moons. Slice tomatoes and kalamata olives in half as well, then chop your red onion, parsley and mint.

    • Pour the dressing over the top. Toss to combine, making sure everything is well coated.
    • Add in the feta cheese and gently toss, just until combined. Chill in the fridge for 1 hour before serving.

    If you can't find Persian cucumbers, you can use English cucumbers and just quarter them if they're large.
