Keto Blueberry Scones
Keto Blueberry Lemon Scones are perfect to serve with a cup of coffee or tea for breakfast or brunch.
- Almond flour
- Heavy cream
- Baking powder
- Vanilla extract
In a medium bowl, combine the almond flour, sweetener, baking powder, and sea salt.
In a small bowl, whisk together the melted butter, lemon zest, vanilla, and egg.
Stir the wet mixture into the dry until a dough forms. Add in the blueberries into the dough.
Place the dough onto a baking sheet lined with parchment paper. Form a disc shape then cut into 8 pieces like a pizza.
Bake @350°F for 18 to 22 minutes, until golden. Mix the sweetener, lemon and heavy cream to make the icing.
Drizzle over the cooled scones and enjoy!
