Whisk the almond flour, oat fiber, baking powder and Salted Caramel Collagen in a mixing bowl then set aside. In a separate bowl, mix the eggs, butter, sour cream, Swerve confectioners, heavy cream, ¼ cup of the salted caramel sauce and vanilla extract.
Mix the wet and dry ingredients together using a hand mixer or whisk, until well combined.
Drizzle the remaining ¼ cup of salted caramel sauce over the tops.
