Ingredients
For the Salad
10
ounces
raw baby spinach
4
hard boiled eggs
quartered
8
ounces
baby bella mushrooms
¼
red onion
thinly sliced
For the Dressing

strips of bacon
diced
⅓
cup
bacon grease

tablespoons
apple cider vinegar

tablespoon
sugar-free apricot jam

tablespoon
shallot
minced

tablespoon
hot water

brown Swerve

Instructions
To Make the Hot Bacon Dressing
Heat a
large skillet
to medium and fry the bacon until crisp. Remove and set aside to drain on paper towels.
Add in the shallots and sauté for about 2 minutes, then add in the sugar-free apricot jam, brown Swerve, apple cider vinegar, dijon mustard and water.
Whisk
until combined and continue cooking for another 2 minutes.
To Assemble the Salad
Add the spinach to a large bowl. Add the sliced mushrooms and red onion over the top.
Add in the hard boiled eggs and reserve crumbles of bacon.
Pour the hot bacon dressing over the top, toss and serve immediately.
