Cobb Salad with Homemade Ranch Dressing - Keto and Low Carb

The Classic Cobb is one of my all-time favorite salads, but it's also completely Keto friendly!  I grill some chicken breasts for this salad and a homemade ranch dressing that is so easy you will never buy store-bought again!

Ingredients

Ingredients

    For the Grilled Chicken

    • 12-16 ounces of Chicken Breast cut into pieces
    • 3 tablespoons olive oil
    • 1 clove of garlic grated
    • 1 teaspoon of salt
    • 1/2 teaspoon of pepper
    • Juice and Zest of 2 lemons

    For the Ranch Dressing

    • 1/2 cup sour cream
    • 1/4 cup heavy cream
    • 1/2 cup mayonnaise
    • 2 tablespoons fresh parsley
    • 2 teaspoons dried dill
    • 1 teaspoon onion powder
    • 1 teaspoon garlic salt
    • 1 teaspoon apple cider vinegar
    • 1 teaspoon fresh lemon juice
    • 1/2 teaspoon Pepper

    For the Toppings

    • Grilled chicken breast see above
    • Avocado
    • Cooked bacon crumbled into pieces
    • Hard boiled egg
    • Blue Cheese crumbles
    • Grape tomatoes
    • Lettuce of your choice

    Instructions

    Preparation

      To Make the Grilled Chicken

      • Add all the ingredients for the chicken, including the chicken in a resealable plastic bag and set aside, while you heat up your grill.
      • Once ready, grill the chicken breast for 8-10 minutes, or until it reaches a temperature of at least 165 degrees.  Slice and set aside.

      To Make the Ranch Dressing

      • Add all the ingredients to the bowl of a food processor and blend.

      To Assemble the Salad

      • Add the lettuce to a bowl and top with the chicken breast.
      • Then the avocado, tomatoes, egg, blue cheese and the bacon. Top with homemade ranch dressing and enjoy!

      Notes

      The recipe for the ranch dressing has 8 servings.  The toppings for the cobb salad is for one salad.  Add as much as you like, depending on how many people you are serving.
