Buffalo Cheese Sauce & Dip - Keto and Low Carb

If you like buffalo wings, you will love this sauce!  It's quick and very easy to make, and absolutely packed with flavor!  I made this sauce to serve over cauliflower, but had a little leftover and realized just how versatile it is.  You can pour it over chicken or broccoli, and serve it as a dip for raw veggies like celery, cauliflower, cucumber or zucchini.  It's a great way to dress up veggies and add healthy fat to your meal. It also freezes beautifully so you can make extra to have on hand any time!

Ingredients

  • 1/4 cup buffalo wing sauce see recipe here
  • 6 ounces of mascarpone cheese softened (or cream cheese)
  • 2 cups shredded cheddar cheese
  • 2 tablespoons grass-fed butter
  • 1/2 cup heavy cream
  • 1/4 cup blue cheese dressing

Instructions

  • Heat a saucepan to medium and melt the butter.  Add in the heavy cream. Then the mascarpone cheese. Add salt and pepper to taste. Add in the shredded cheddar.
  • Then whisk in the buffalo sauce. And finally, whisk in the blue cheese dressing.  Mix until well combined and smooth. Remove from the heat.
  • It's ready to serve with your favorite veggie or protein!
  • Store leftovers in the fridge for a few days or freezer.  Reheating is easy either stove top or in the microwave.  Add a tiny bit of hot water, whisk and it will return to it's original velvety texture!

Notes

If you'd like a thicker dip, add 2 additional ounces of the mascarpone cheese.  You can substitute the mascarpone with cream cheese, but it will have a stronger flavor.  If you sub, be sure to adjust the macros accordingly.
