If you like buffalo wings, you will love this sauce! It's quick and very easy to make, and absolutely packed with flavor! I made this sauce to serve over cauliflower, but had a little leftover and realized just how versatile it is. You can pour it over chicken or broccoli, and serve it as a dip for raw veggies like celery, cauliflower, cucumber or zucchini. It's a great way to dress up veggies and add healthy fat to your meal. It also freezes beautifully so you can make extra to have on hand any time!
Heat a saucepan to medium and melt the butter. Add in the heavy cream. Then the mascarpone cheese. Add salt and pepper to taste. Add in the shredded cheddar.
Then whisk in the buffalo sauce. And finally, whisk in the blue cheese dressing. Mix until well combined and smooth. Remove from the heat.
It's ready to serve with your favorite veggie or protein!
Store leftovers in the fridge for a few days or freezer. Reheating is easy either stove top or in the microwave. Add a tiny bit of hot water, whisk and it will return to it's original velvety texture!
If you'd like a thicker dip, add 2 additional ounces of the mascarpone cheese. You can substitute the mascarpone with cream cheese, but it will have a stronger flavor. If you sub, be sure to adjust the macros accordingly.
