🔪 How to Make Keto Pumpkin Chia Pudding
Add the unsweetened coconut milk, pumpkin puree, maple syrup, pumpkin pie spice and vanilla extract to a mixing bowl.

Whisk until well combined.

Add in the chia seeds and continue mixing to combine.

Cover and chill in the fridge for at least 30 minutes or until it has thickened to your liking.

Serve as is, or with a dollop of whip cream and a sprinkle of cinnamon.

💡 Tips for Making Chia Seed Pumpkin Pudding
- This is the perfect make-ahead dessert. It will keep in the fridge for several days, so you can prepare it in advance and serve when you’re ready.
- Be sure you are using pure pumpkin puree, not to be confused with pumpkin pie filling, which has sugar and other additives that you don’t want.
- Make sure you are using the canned unsweetened coconut cream, not the type that comes in a carton. This will give you the right level of creaminess and perfect texture.
- Start with adding 2 tablespoons of the sugar-free maple syrup first, then give it a taste and if you’d like it to be a little sweeter, you can add in more. I found that 3 tablespoons worked perfectly for me.

🔄 Substitutions and Additions
- If it’s pumpkin season and you happen to make your own pumpkin puree, by all means use it instead of the canned version.
- If you don’t have coconut cream, you can substitute with heavy cream.
- If you don’t have sugar-free maple syrup, you can substitute with sugar-free honey. If you don’t have either, you can use 2-3 tablespoons of monk fruit/allulose, just be sure to use the powdered form so that your pudding won’t have a gritty texture. If you only have the granular version, run it through a coffee grinder or mini chopper first.
- If you don’t have pumpkin pie spice or the ingredients to make it, you can just use ground cinnamon instead.
- The chia seeds are a key ingredient, as they are what thickens the pudding. There really is no suitable substitute that I’ve ever tried or can recommend.
- To add more coconut flavor, you can add in some coconut extract, just about 1/2 teaspoon as a little goes a long way. You can reinforce that sweet coconut flavor by also adding in some unsweetened shredded coconut.

Absolutely, and particularly this Keto friendly pumpkin chia seed pudding, as it’s sugar-free and low in carbs. Chia seeds are loaded with healthy fats and fiber, making it ideal for Keto.

Yes, as I mentioned since it’s high in healthy fats, fiber and all the ingredients are sugar-free, it’s perfect for anyone following a Keto diet.
Can I have pumpkin puree on keto?
Yes, as long as you are using pure pumpkin puree and not pumpkin pie filling, it’s perfectly suitable for Keto as it’s relatively low in carbs.
Why can’t you eat chia seeds right away?
Since they are SUPER absorbent, you’ll want to allow them to sit in a liquid to absorb first, then you can dig right in.

- 2-3 tablespoons sugar-free maple syrup
- 1 teaspoon Pumpkin Pie Spice
- 1 teaspoon vanilla extract
