These baked salmon foil packets are an entire meal with zucchini and tomatoes included. As the salmon bakes, the tomatoes and zucchini cook lending even more amazing flavor to the salmon.

No fuss dinners are simply the best on those busy weeknights and this one sure fits the bill.

One of the things I love most about using individual salmon filets is everyone gets their own packet! How great is that? Not only is clean up a breeze, these individual foil packets makes for an easy and unique way of serving.

If you’re feeding a larger crowd, you can always bake this Chipotle Lime Salmon as the whole filet. You’ll need to increase the cooking time slightly. Start checking the middle of the filet with a fork after about 16 minutes to ensure its cooked to your preference.

How to Make Keto Chipotle Lime Salmon Foil Packets

Preheat your oven to 400F.

Add all the ingredients except the salmon, tomatoes, cilantro and zucchini into the bowl of a mini chopper and blend until well incorporated.

Add each piece of salmon to a small sheet of aluminum foil that’s been sprayed with nonstick spray

Brush the mixture over the tops of each filet.

Add the zucchini and tomatoes to a bowl and pour the remaining mixture over the top.  Toss to combine, then add 1/4 of the veggies next to each piece of salmon.

Top with the cilantro and seal up the edges of the foil to make individual packets.

Place the packets on a baking sheet.

Bake for 12-15 minutes or until the salmon is cooked through and the zucchini is fork tender.

If you prefer summer squash, you can certainly substitute the zucchini, just make sure you adjust your macros accordingly.

Serve with a garnish of cilantro and a squeeze of lime. That’s all these packets need with the amazing flavors of the chipotle lime mixture.

Can Salmon Be Used for Campfire Meals in Foil?

You bet it can! Foil packets with a protein and veggies are commonly referred to as Hobo Packet Meals. They make the perfect campfire meal.

And the beauty of cooking salmon is it cooks quickly. So, when you’re camping with friends or family, you can make up the salmon packets in advance, place them in the ice chest, then grill them over your camp fire or camp fire grill and you’ll have dinner ready in a flash.

To cook salmon packets on a camp fire, make sure your packets are sealed up well, then place them slightly off to the side over the fire. You’ll want to move the packets around a good bit to make sure they don’t get overcooked in one spot.

Can You Freeze Leftover Salmon Hobo Packets?

This Chipotle Lime Salmon recipe gets it incredible flavor from using fresh ingredients, so it’s recommended that you prepare and serve it fresh.

However, if you find yourself with a left over packet, you can just take the veggies and salmon out of the foil, place them in an air tight container and store in the freezer for up to a month.

Ingredients
 

  • 1 pound salmon, cut into 4 pieces
  • 1 cup cherry tomatoes
  • 1 medium zucchini, cut into half moons
  • 1 smoked chipotle pepper, in the can
  • 1/4 cup olive oil
  • 2 cloves garlic
  • Zest and juice of 1 lime
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic salt

Instructions
 

  • Preheat oven to 400F.

    1. There is a great article on Healthline.com that talks about the amount of aluminum you ingest when cooking with foil and if it has harmful effects on your body. I do not believe the amount of aluminum dissolved, if any, in the 12-15 minutes these packets cook would be harmful-but as with everything, I always encourage people to do their own research if you question it.
