Brussels sprouts have a bad reputation for being bitter, but they don’t have to be. When they’re roasted at a high temperature, they caramelize which brings out their natural sweetness.

If you have picky eaters that are on the fence about trying them, this recipe will win them over. These brussels sprouts are perfectly seasoned giving them a nice savory flavor, then roasted in a sugar-free honey butter that makes them seriously additive.

🔪 How to Roast Brussels Sprouts in the Oven

Preheat oven to 400°F.

Wash, dry and slice your Brussels sprouts in half, then add them to a mixing bowl.  Make sure they are well dried using paper towels otherwise they won’t crisp up in the oven.

Drizzle them with the olive oil, smoked paprika, salt and pepper, then toss to combine.

Tip: If you like a little heat, you could also add a pinch of cayenne pepper as well.

Spread out the Brussels sprouts on a baking sheet lined with parchment paper and bake for 20 minutes.

Tip: Alternatively, you could fry your Brussels sprouts then toss them in the honey butter after they’ve been fried and drained.

During the last 5 minutes of roasting, add the honey and butter to a small microwave safe bowl and heat just until both are melted and warm, then whisk to combine.

Remove them from the oven, pour them back into the original mixing bowl and pour the honey butter over the top.  Toss to combine, making sure each piece is coated.

Pour them back onto the baking sheet in a single layer and bake for another 10 minutes or until slightly caramelized and cooked through. 

Sprinkle some of the (optional) red pepper flakes over the tops of the oven roasted brussels sprouts and serve.

  • Color: When shopping for brussels sprouts, look for bright green leaves without any browning or yellowing.
  • Shape and size: The leaves should be tight and snug against one another. For a sweeter flavor, you should look for smaller brussels sprouts because the larger they are, the more bitter they can be.
  • Packaging: Avoid packages of brussels sprouts that have moisture. Brussels sprouts that cannot breathe will sweat and create moisture. The moisture can create mold and you don’t want that.
  • Trim the stem: Before cooking brussels sprouts, trim the woody ends, leaving the sprout itself in place.
  • Dry them: After you wash them lay them out on paper towels until they are completely dry.

Even though raw brussels sprouts are bitter, when you roast them, they taste sweeter and are much milder. You also want to make sure you season them well to help balance out their flavor.

Why Won’t My Brussels Sprouts Get Crispy?

When roasted brussels sprouts are not crisping up, it’s most likely due to moisture from washing them getting trapped in the layers. The moisture turns to steam when they are cooking which can make them soggy.

Make sure you always allow time for them to dry really well on paper towels before cooking them. Another key to crispy brussels sprouts is to toss them generously in oil.
