If you like the popular mounds candy bar, but without all the carbs, you’re going to love these! They are fudgey and have that classic chocolate coconut flavor baked into little mini brownies.
They’re the ideal mini dessert for when you’re craving something sweet, but don’t want the hassle of a full dessert. They freeze perfectly, so you can always have some on hand for when those chocolate cravings hit.

These Keto brownies are the perfect size for kids too, as they are baked in a mini muffin pan. If you’re looking for a sugar-free sweet treat, give these a try, you won’t be disappointed.

- Super fine almond flour
- Sugar-free semi-sweet chocolate chips
- Butter
- Unsweetened cocoa powder
- Unsweetened shredded coconut
- Monk fruit/allulose
- Eggs
- Coconut extract
- Salt

🔪 How to Make Gluten-Free Brownies
Preheat your oven to 350°F.

Sift the almond flour, cocoa powder and salt into a mixing bowl, then set it aside.

Add the chocolate chips and butter in a separate microwave safe bowl and heat for 30 seconds. Whisk to combine and if the chocolate isn’t fully melted, heat again in 10 second increments.

Mix in the 2 eggs, one at a time, using a hand mixer. Then add in the sweetener and coconut extract, then continue mixing.

Add in the dry ingredients and mix just until combined.

Add in the shredded coconut and mix by hand.

Scoop the batter into a mini muffin pan that has been sprayed with coconut oil. Add some (optional) chocolate chips over the top and bake for 15-17 minutes or until cooked through.

When you check with a toothpick, it shouldn’t come out completely clean, but not super wet either.

Allow to cool completely on a wire rack before serving.

Store leftover brownie bites in an airtight container in the fridge for 5 days or freeze.

💡 Tips for the Best Keto Brownies
- If you happen to store your almond flour in the freezer, you’ll want to take it out in time to come to room temp. If you use it while it’s frozen, it will absorb the moisture from the wet ingredients too quickly, making a dry baked product.
- Almond flour brownies have a tendency to be more delicate than when made with traditional flour. Because of this, you’ll want them to cool for a while before transferring them to a cooling rack.
- Sifting the almond flour and cocoa powder will help prevent lumps in the batter, so don’t skip that step.
- Using room temperature butter will help it and the chocolate chips melt at the same time and blend together perfectly.
- Use a small cookie scoop for the batter will ensure the brownies are the same size and cook evenly.

🔄 Substitutions and Additions
- Adding some extra chocolate chips on top before baking helps add a little more richness and texture to the brownies. You can also use sugar-free white chocolate chips if you’d like.
- If you love the popular almond joy candy bar, you can add some chopped almonds over the top instead of the chocolate chips. Alternatively, you can even fold them into the batter.
- For a little punch of fruitiness, you can swirl in a small amount of Keto Raspberry Jam into the batter.
- If you don’t have a monk fruit/allulose blend, you can use all monk fruit at the same 2/3 cup or if you only have allulose, you can use 3/4-1 cup of allulose instead.

Are Brownies Keto?
It goes without saying brownies that are loaded with sugar and traditional flour are not Keto friendly. These brownies made with almond flour and sugar-free chocolate, so they are a great alternative and they save you a ton of carbs.
Can I Freeze Gluten Free Brownies?
Absolutely! They freeze wonderfully. In fact, when you make a batch, double it so you can have a sweet treat on hand when you get a chocolate craving.
For optimal results wrap them, in serving sizes, in plastic wrap and place in the freezer for up to a few months. To thaw, just unwrap and place on the counter until they are ready to eat.
Are keto brownies good for diabetics?
They are a great alternative since they are very low in carbs and have no refined sugar, but instead use sugar-free chocolate.

Because of major health issues I can’t have wheat, grains, oats, nuts ( unless ground finely into nut flours). Diverticulitis, and kidney problems…….other issues also 🌹🙂. I love so many of your re pies and I’m on a low carb way of eating, 3 years now. So far it is doing wonderful for me at 20 carbs per day. Sometimes a tad less than 20.
