🔪 How to Make French Silk Pie

Prepare and bake your pie crust per the directions, baking 15-18 minutes. If the edges get dark too quickly, lightly cover them with aluminum foil. Then remove it from the oven and allow to cool at room temperature while you prepare the filling.

Add the heavy cream to a mixing bowl and beat it using a hand mixer until you have stiff peaks. Place it in the fridge while you make the custard.

whip cream in glass bowl with hand mixer

Add the eggs and sweetener to a heat proof mixing bowl set over a saucepan with boiling water to make a double boiler.  Simmer your water on medium low heat and place the mixing bowl over the top.

4 eggs and sweetener in double boiler

Mix constantly a hand mixer, for 12-15 minutes.  If you don’t have a hand mixer, you can use a whisk and mix by hand, but the hand mixer makes it much easier.

Once that’s ready it will be very pale yellow color and will have thickened up. Take it off the heat and mix in the vanilla extract, then set it aside to cool slightly.

Add the sugar free chocolate chips to a microwave safe bowl and heat it in the microwave for 1 minute, remove and stir.  Then reheat it in 10 second increments until it has fully melted.

Add half the butter and half the melted chocolate into the eggs and sweetener mixture, then mix using your hand mixer.  Repeat with the remaining butter and chocolate and continue mixing for 3 minutes.

Gently fold in the whipped cream until well combined.

Once there are no streaks of chocolate remaining, pour the sugar free chocolate cream into your cooled pie crust.  Chill it in the fridge overnight or at least 8 hours until it has fully set.

You can add some (optional) Keto whipped cream made with heavy whipping cream and sugar free sweetener. Then garnish with grated chocolate or a dusting of unsweetened cocoa powder before cutting and serving.

    Store leftovers in the fridge.

How Long is French Silk Pie Good for in the Fridge?

This homemade low carb chocolate pie will stay fresh in your fridge for 5-6 days. Just keep it covered to help it stay fresh longer.

Can French Silk Pie Be Frozen?

Yes, you can freeze this Keto pie. For best results, if you want to freeze the whole pie, place it in the freezer for a few hours. Then remove it and wrap the frozen pie in plastic wrap, then a layer of foil.

If freezing the whole pie, you may want to wait and add fresh whipped topping before serving.

If you want to freeze leftover slices, just place them on a parchment paper lined baking sheet making sure they aren’t touching each other. Freeze for a few hours, then remove them from the freezer and wrap each one in plastic wrap, followed with a layer of foil. To thaw, unwrap and place in a sealed container in the fridge overnight.

Why is it Called French Silk Pie?

While you'd think this pie gets its name from a fancy French pastry, it’s actually an American creation. The “silk,” in the name comes from its creamy and silky mousse-like filling.

What Does French Silk Pie Taste Like?

The filling for chocolate cream pie, or French silk pie, is cool and creamy with a mousse-like texture. Depending on the type of chocolate used in the recipe, the flavor can range from really intense to more of a lighter, milk chocolate flavor.

For this recipe, semi-sweet chocolate chips are incorporated with whipped cream and a slightly cooked sweetened, beaten egg yolk mixture that gives it a rich, though not deep, chocolate flavor.

How Many Carbs are in a Chocolate Cream Pie?

For a slice of traditional chocolate cream pie there are...wait for it.... anywhere between 40-65 net carbs per slice!

But there's good news! With just a few simple low carb substitutions in this recipe, you can get all those same wonderful flavors and textures with only 6 net carbs per serving!

How Do You Thicken Chocolate Pie Filling?

If you're having trouble getting the filling to firm up, make sure you're beating the egg whites until stiff peaks are formed. This filling recipe is made using melted chocolate chips so once it has cooled and has time to set up in the fridge, it should firm up perfectly.

Can I have French Silk Pie While Pregnant?

This version is absolutely safe, since you’ll be cooking the eggs!
