If you love simple appetizers that look fancy but take minutes to make, you’ll love these Salmon Cucumber Rolls. They’re refreshingly cool, creamy, and loaded with tender smoked salmon, crisp cucumber, and tangy cream cheese. They’re light, flavorful, and the kind of appetizer that keeps you reaching for just one more.

My recipe keeps the steps simple but brings in layers of flavor with dill, lemon zest, and briny capers. That contrast to the rich cream cheese and buttery salmon balances everything perfectly. These rolls make an ideal appetizer for adding a touch of elegance to brunches, showers, and holiday parties.

🔪 How to Make Salmon Cucumber Rollups

Wash and dry your cucumber, then slice it super thin using a wide vegetable peeler or mandolin slicer.

Dry each slice with paper towels, pressing down gently, then line them up on a piece of parchment paper, slightly overlapping each other.

On the bottom third of the cucumbers, spread the cream cheese and top with the diced red onion, capers, fresh dill and lemon zest.

Add the thinly sliced salmon on top and tightly tucking the bottom part under, roll upward, using the parchment to help you.

Make sure you keep it as tight as you kind, while still being gentle.  This will help keep the roll together.

Once you have it all rolled up, remove the parchment paper and slice into pieces measuring about 1 1/2 inches in thickness.

Serve right away on a platter and sprinkle fresh dill over the tops. I don’t recommend making these in advance as the cucumber will begin to soften and become watery.

☑️ Storage Instruction

While these rolls are best served when fresh you can store leftovers in an airtight container lined with paper towels for up to 1 day. I do not recommend freezing them because the texture of cucumbers gets soggy.

💡 Tips

  • Pat the cucumber slices completely dry before assembling to prevent sogginess.
  • Use a mandoline slicer for evenly thin slices that roll easily.
  • Add a light sprinkle of salt to the cucumbers to draw out moisture if they’re very watery.
  • Assemble just before serving for the freshest texture.
  • Serve on a chilled platter to keep everything crisp and cool.

🔄 Substitutions and Additions

  • Salmon: Swap smoked salmon for flaked cooked salmon if you prefer a milder flavor.
  • Avocado: Add thin slices of avocado for extra creaminess.
  • Cream cheese: You can try flavored cream cheese like chive or garlic for added depth.
  • Crunch: Add match stick radishes for extra crunch.
  • Greens: Add a few microgreens or arugula leaves inside the rolls for color and a peppery note.

How Do I Keep the Rolls From Falling Apart?

Roll tightly but gently, and make sure the cucumber slices overlap slightly for structure.

Can I Use Regular Cucumbers Instead of English Cucumbers?

Yes, but peel off the thicker skin and remove some seeds so they roll more easily.

What if I Don’t Like Capers?

You can skip them or replace them with chopped olives for a similar briny flavor.

Can I Make Them Ahead of Time?

These rolls are best served right after assembling. But for a shortcut you can an prep the filling and slice the cucumber in advance, but assemble the rolls right before serving.
