- English cucumber
- Smoked salmon
- Cream cheese
- Red onion
- Capers
- Fresh dill
- Lemon zest
- Salt
- Ground black pepper

🔪 How to Make Salmon Cucumber Rollups
Wash and dry your cucumber, then slice it super thin using a wide vegetable peeler or mandolin slicer.

Dry each slice with paper towels, pressing down gently, then line them up on a piece of parchment paper, slightly overlapping each other.

On the bottom third of the cucumbers, spread the cream cheese and top with the diced red onion, capers, fresh dill and lemon zest.

Add the thinly sliced salmon on top and tightly tucking the bottom part under, roll upward, using the parchment to help you.

Make sure you keep it as tight as you kind, while still being gentle. This will help keep the roll together.

Once you have it all rolled up, remove the parchment paper and slice into pieces measuring about 1 1/2 inches in thickness.

Serve right away on a platter and sprinkle fresh dill over the tops. I don’t recommend making these in advance as the cucumber will begin to soften and become watery.

While these rolls are best served when fresh you can store leftovers in an airtight container lined with paper towels for up to 1 day. I do not recommend freezing them because the texture of cucumbers gets soggy.

- Pat the cucumber slices completely dry before assembling to prevent sogginess.
- Use a mandoline slicer for evenly thin slices that roll easily.
- Add a light sprinkle of salt to the cucumbers to draw out moisture if they’re very watery.

Yes, but peel off the thicker skin and remove some seeds so they roll more easily.
What if I Don’t Like Capers?
You can skip them or replace them with chopped olives for a similar briny flavor.
Can I Make Them Ahead of Time?
These rolls are best served right after assembling. But for a shortcut you can an prep the filling and slice the cucumber in advance, but assemble the rolls right before serving.
