Tips for Making Keto Smoked Salmon Cucumber Bites
I use English Cucumber for this recipe, because I love how the seeds and skin are very tender. If you can't get English cucumber, you can use a regular cucumber, I recommend peeling at least part of the skin off.
The cream cheese mixture is pretty straightforward and should require no substitutions. If you prefer mascarpone cheese to cream cheese, you can use it instead but it won't be quite as flavorful.
I use dried dill, but feel free to use fresh dill if you happen to have some on hand. I also top these with capers, which is a classic flavor with smoked salmon. If you don't like capers, you can just omit them and top with tiny pieces of fresh dill.
Which Salmon is Best for Keto?
I used smoked salmon...Nova, Gravlax or Lox all work perfectly and are all fine for Keto. Nova (named for it's origin in Nova Scotia) is my salmon of choice, because it's cured and cold smoked. It gives the salmon a wonderful smoky flavor and is just delicious! You can enjoy it with cream cheese on Keto Fathead Bagels, yum!
Gravlax is not smoked, but is typically cured with whole spices, dill, citrus and sugar.
Although Lox can be a bit salty, because it's cured with salt and not smoked, it would still work perfectly with this recipe. Just be sure to replace the Garlic Salt with Garlic Powder.
Is Salmon ok for Keto?
Absolutely! In fact, it's one of the very best proteins to enjoy on a Keto diet! It's loaded with Omega-3 fats, potassium protein and B vitamins!
How Many Carbs in Salmon?
Zero! So again, it's perfect for a Low Carb and Keto diet!

These were such a big hit Thanksgiving that I have been asked for an encore for Christmas. I never knew what was missing when I attempted to make salmon with cream cheese bites until I tried your recipe. The heavy cream and lemon juice loosens up the cream cheese enough for piping consistently without compromising the flavor. Perfecto!
