It’s ridiculously easy to make but looks and tastes like something you’d find at a fancy candy shop. Whether you’re whipping it up for a quick holiday treat or gifting it to family and friends, it’s always a hit.

    And the best part is you don’t need fancy tools or endless ingredients, just a microwave and three simple ingredients. It’s the kind of dessert that’s fun to make and even better to eat. It's packed with those classic cookies and cream flavors no one can resist.

    🛒 Ingredients for Sugar Free Cookies and Cream Bark

    • Sugar-free white chocolate chips
    • Sugar-free milk chocolate chips
    • Keto Chocolate Sandwich Cookies

    • Mixing bowls
    • Sheet pan
    • Silpat or parchment paper
    • Offset spatula

    🔪 How to Make Keto Cookies and Cream Bark

    Add the sugar-free milk chocolate chips to a small microwave safe bowl and heat in the microwave for 45 seconds. Remove and stir, then microwave in 10 second increments until all the chips have melted.

    Pour the melted chocolate over a small baking sheet lined with a Silpat or parchment paper.

    Spread using an offset spatula. Place in then fridge for a few minutes, allowing the chocolate to set up.

    Chop the chocolate sandwich cookies into small pieces and have them ready. You made need a little more or less, it will all depend on how thick or thin you spread out your chocolate.

    Add the sugar-free white chocolate chips to another small microwave safe bowl and repeat the melting process. Allow the white chocolate to cool, but not become solid.

    Then pour over the top of the milk chocolate.

    Spread the white chocolate evenly over the top.

    Quickly sprinkle the crushed cookies over the top of the white chocolate layer.  You have to work quickly, before the chocolate sets.

    Place the bark back in the fridge until it has completely set.

    Then break it apart in randomly sized pieces and enjoy.

    ☑️ Storage Instructions

    Fridge: If you have leftover bark, you can store it in an airtight container for up to one week.

    Freezer: You can also freeze it. Place it in a sealed bag for up to three months. You'll want to let thaw briefly on the counter before serving.

    💡 Tips for Making Keto Chocolate Bark

    • Use high-quality chocolate: Because there are only 3 ingredients, it’s really a must to use a good-quality and great-tasting chocolate. 
    • Sprinkle quickly: Have the cookies ready to go so they stick to the white chocolate before it sets.
    • Chop cookies small: Smaller pieces make the bark easier to break and eat.
    • Use parchment or silpat: This makes removing the bark from the baking sheet much easier.
    • Cool before breaking: To get clean edges, let the bark totally cool before breaking it into pieces.

    🔄 Substitutions and Additions

    • Marbled: Swirl the milk and white chocolate together for a pretty design.
    • Dark chocolate: Use dark chocolate instead of milk for a deeper and richer flavor.

    Can I Make This Ahead of Time?

    Absolutely! It stores wonderfully in the fridge or freezer, so it’s perfect for prepping early.

    What Happens if the Chocolate Seizes?

    This usually happens when the chocolate has come in contact with water or some other liquid. If this happens you can try adding a teaspoon of coconut oil or butter to smooth it out again.

    Why Are My Layers Separating When I Break the Bark?

    This usually happens if the first layer is too cold or the second layer cools too much before setting. If the milk chocolate base is overly chilled, the white chocolate may not stick like it should. Instead, let the milk chocolate set just until firm but still slightly tacky, then add the white chocolate layer.

    How Thick Should I Spread Each Chocolate Layer?

    Aim for about ⅛–¼ inch thickness for each layer. Too thin and the bark may be brittle, too thick and it can be hard to break.

    Can I Make This Without a Microwave?

    Yes! Melt the chocolate over a double boiler on the stovetop, stirring constantly to prevent overheating.
