🔪 How to Make Italian Antipasti Skewers
If you are planning to use a balsamic vinegar reduction, you can start by adding about 1/2 cup of balsamic vinegar in a small saucepan over low heat.

Boil the vinegar until it’s reduced to a thick glaze, while you assemble the skewers.

Take a skewer and thread through a tomato, basil leaf, a piece of salami folded like a fan, artichoke heart, black olive, roasted red pepper, folded piece of prosciutto, mozzarella ball, another basil leaf and finish with another tomato.
Repeat the process for the remaining 9 skewers, then set them on a platter and serve.

Optional: drizzle the balsamic vinegar reduction over the top and serve. Alternatively, you could drizzle with homemade pesto or plain extra virgin olive oil instead.

☑️ Storage Instructions
Store assembled skewers in an airtight container for up to 2 days. Keep balsamic glaze separate until ready to serve for the freshest look.

💡 Tips for Making Antipasti Skewers
- Pat the mozzarella balls and artichokes dry before assembling so the skewers stay neat and easy to handle.
- Chill the finished skewers for about 20 minutes before serving to help the flavors settle together.
- Keep basil leaves whole and add them just before serving so they stay bright and fresh.
- Serve extra balsamic glaze or olive oil on the side so guests can add more if they like.
- If transporting to a party, place the skewers in a shallow container lined with paper towels to prevent sliding.

🔄 Substitutions and Additions
What I really love about these skewers is how versatile they really are! If you have some of the ingredients, you can easily sub them out. For example, if you have pepperoni instead of salami, use it! If you don’t have mozzarella, but instead have provolone, use it!
You can also mix things up by adding other Keto friendly foods that are typically on an antipasti platter like marinated mushrooms, artichoke hearts, prosciutto, sopressata, pepperoni, pepperoncini, etc.

Is Italian Antipasti Keto friendly?
Absolutely! The Italian cold cuts and veg that I mentioned above are all Keto friendly and Low Carb. In fact, these all make great healthy snacks too. One of my favorite things to eat, when I don’t feel like cooking, is a snack plate filled with foods just like these!
What Size Skewers Work Best?
Six inch appetizer skewers are easy to handle and fit nicely on serving platters.
How Many Skewers Should I Plan Per Person?
If you’re serving these with other appetizer, one or two per person should be plenty.
Can I make these Dairy Free?
Sure. Simply leave out the mozzarella or replace it with dairy free cheese alternatives.

can you make these the night before?
Sure you can! I would just wait to drizzle the balsamic reduction, until you’re ready to serve them.
I’m looking forward to making these! What length skewers do you use?
I use the normal BBQ-size skewers, but you can use the small appetizer size and just make them smaller if you prefer.
This just spells old school Italian! I love the colors of these skewers. The roasted red pepper gives them a delightful, unexpected boost of flavor. I served them during a Christmas social and they were gone within an hour.
They are the colors of my family for sure, I just love them! Glad your guests enjoyed 🙂
Happy Blessed Thanksgiving
Thanks so much, you too!
