I grew up eating the classic stuffed artichokes that my grandparents would make and really miss them. The garlic and lemon buttery favors are just incredible. But they can be a little time consuming to make and that’s if the grocery store has some nice ones on hand.
If you like artichoke hearts, but don’t have time to make them from scratch, you’re going to love this quick and easy shortcut that is every bit as good. Whole baby artichokes are cut and basted with a lemon garlic butter, then roasted in the air fryer until the edges are slightly caramelized.

Serve them with an easy homemade garlic aioli, that you can quickly whip up while the artichokes are roasting. And boom, they are done just that quickly and ready to enjoy.

- Artichoke hearts
- Easy Garlic Aioli
- Garlic
- Olive oil
- Butter
- Lemon
- Parsley
- Salt
- Black pepper

🔪 How to Make Artichoke Hearts in the Air Fryer
Prepare the Garlic Aioli, then set it aside to allow the flavors to meld.

Preheat your air fryer @ 400°F for 5 minutes.
Rinse and drain the artichoke hearts, then pat dry using paper towels.

Brush the artichoke hearts with olive oil, and sprinkle the salt and pepper on top.

Place them in your air fryer basket that’s been brushed with olive oil, making sure to leave space around each one so the air can circulate.
Air fry for 7 minutes at 400°F.

Add the garlic into a small bowl with the butter and melt in the microwave. Then brush over the tops.

Continue cooking for another 3-4 minutes or until slightly caramelized.

Sprinkle the chopped parsley over the tops and squeeze the lemon over the tops, then serve with the Garlic Aioli for dipping on the side.

Store leftovers in an airtight container in the fridge for 4-5 days.

These artichoke hearts will pair well with just about any main dish that you like, here are some of my favorite chicken dinners:

💡 Tips
- Be sure to rinse them well and let them dry on paper towels. It’s important they are really dry, otherwise you won’t get those nice crispy edges that are so flavorful.
- Be sure to finely grate the garlic with a microplane, rather than simply mincing it. If there are chunks of raw garlic roasting at a high temperature, you run the risk of them burning and will ruin the artichokes.
- Don’t brush the garlic butter on too soon. You might be tempted to just brush it on initially before cooking, and if you do, it will likely burn. This recipe works best when you brush it on during the last few minutes.
- Make sure you leave enough space between the artichokes in the air fryer. They need room around each one for the air to circulate, otherwise they will steam instead of roast.

🔄 Substitutions and Additions
- If you can’t find the whole baby artichoke hearts, you can buy them already halved or even quartered. Just make sure they are NOT marinated.
- If you want a little kick of heat, sprinkle a little red pepper flakes over the tops before roasting.
- For a hint of smokiness, adding a little smoked paprika on top will give them nice flavor.
- If you can’t have butter, you can use olive oil instead, just be sure to thoroughly mix the grated garlic in so there are no clumps.
- For more flavor and a hint of “breading” sprinkle some grated parmesan cheese over the tops during the last few minutes of roasting.

What is the best way to cook canned artichoke hearts?
Roasting them in the air fryer, as this recipe does, or even in the oven works best. Just make sure you rinse the preserving brine off and dry them completely before roasting.
Are you supposed to rinse canned artichoke hearts?
Absolutely, and this is true of most any canned or even jarred vegetable. You really don’t want the brine that’s used to preserve them in your final dish, as it has a salty unappetizing flavor.
Are canned artichoke hearts as healthy as fresh?
They typically are, provided to rinse/remove the brine, which is loaded with sodium. You can also usually find them frozen as well, which I prefer as a better option since they are frozen at their peak and don’t have that brine preserving them.Are canned artichoke hearts keto?

Canned, fresh or frozen artichoke hearts are fine for keto as they are low in carbs. They also have a fair amount of fiber, which is subtracted from the total carbs, making them even lower in net carbs. There are only 3 net carbs per serving for this recipe.
