🔪 How to Make Keto Peanut Butter Cups
Add the chocolate chips and coconut oil in a small mixing bowl.
Melt in the microwave in increments of 30 seconds, stirring in between, until fully melted.
Whisk in the sweetener until combined.
Tip: The mixture should be loose and pourable, but not too thin.
You should have around 1 cup of the melted chocolate mixture. Pour half the mixture into the bottom of 12 silicone muffin cups.
Tip: Swirl the chocolate around so that it reaches up the sides slightly. This will help cover the sides of the cups and keep the peanut butter center hidden.
Place in the fridge to set while you prepare the filling.
In a separate mixing bowl, add in the peanut butter, butter, sweetener and vanilla extract.
Melt in the microwave, just until softened.
Tip: You’re not looking to completely liquify the mixture.
Using a small scooper, scoop out 12 portions and drop them in the center of each of the muffin cups.
Tip: If you don't have a mini scooper, you can use about 2 teaspoons.
Be sure to gently spread the mixture evenly, while still keeping it away from the edges. Place them back into the fridge and chill until the mixture firms up a bit.
Lastly, pour the remaining chocolate mixture over each muffin cup, first around the edges, then over the tops. Gently swirl them so the chocolate is covering the peanut butter in an even layer.
Place them back into the fridge to set and once they have firmed up, they’re ready to enjoy!
How Do You Store Keto Reeses Cups?
For best results, you want to keep your homemade Keto Reeses cups in the fridge in an airtight container. They will last up to about 3 weeks in the fridge.
Just keep in mind that chocolate always hardens when its chilled. If you want the chocolate to be softer, allow the peanut butter cups to sit out at room temperature for a few minutes.
You can also freeze them for up to a couple months.
Is Peanut Butter OK for Keto?
Yes, peanuts are indeed a legume and it's a popular belief that all legumes should be avoided on Keto, but that's not necessarily the case with peanuts. Peanuts are much higher in fat than other beans and have a lot of fiber. In this regard, they're very similar to almonds.
Peanuts are also gluten free, so with all things considered, when eaten in moderation, peanut butter is perfectly fine for low carb and Keto diets.
What Brand of Peanut Butter is Best for Keto?
When you're selecting a Keto friendly peanut butter, you want to look for one that says, " All Natural," and also indicates there is no sugar added.
While everyone has their favorite peanut butter brands, I was introduced to Crazy Richard's some time back and I haven't used another brand since. Their peanut butter is rich and creamy, has no preservatives, is non-GMO and it only has one ingredient...PEANUTS. Check it out along with their other products on their website.
Are Reese's Peanut Butter Cups Keto-Friendly?
It's important to read labels, beyond the amount of carbs, to see if a product is considered Keto-friendly. For instance, these are the first four ingredients on the store-bought brand of peanut butter cups.
- Milk Chocolate (Sugar, Cocoa Butter, Chocolate, Skim Milk, Milk Fat, Lactose, Lecithin, PGPR)
- Sugar
- Peanuts
- Dextrose
As you can see, sugar and dextrose are two major ingredients in the original candy that would knock you out of ketosis and therefore should be avoided if you are following Keto.
How Many Carbs are in a Keto Peanut Butter Cup?
Just by swapping out the sugary ingredients found in the original brand, you can make your own Keto peanut butter cups that only have 2 net carbs per piece.
