A delicious frittata is always welcomed on my table! They are one of the most versatile recipes you’ll ever make and are the perfect way to use up leftover ingredients you may have in the fridge! Plus, they are super simple and can be on the table in just minutes.
I recently made this Slow Cooker Cabbage recipe and had some extra Italian sausage. Of course, you can use any of your favorite sausage, but the herbs in Italian sausage work beautifully with sautéed peppers, onions and fluffy eggs to make the most delectable frittata.
A wonderful thing about this recipe is, even though it's bursting with savory flavor, it's a naturally low-carb meal which is perfect for everyone in your family.

- Italian sausage
- Baby spinach
- Red bell pepper
- Yellow onion
- Mozzarella cheese
- Eggs
- Heavy cream
- Butter
- Salt
- Ground black pepper

🔪 How to Make Italian Sausage and Peppers Frittata
Preheat oven to 400°F.
Heat a large nonstick/oven-safe skillet to medium and add in the sausage.
Cook until browned, then remove and set aside.
Add in the butter, onions and red bell pepper.
Sauté for a few minutes until softened, then add in the spinach.
Once wilted, add the sausage back in.
Top with the mozzarella cheese.
In a large mixing bowl, add in the eggs, heavy cream, salt and pepper and mix using a hand mixer or whisk.
Pour the egg mixture over the sausage and continue cooking for about 4-5 minutes.
Place the skillet in the oven and bake for 8-10 minutes or until the eggs have set.
Top with fresh parsley, slice and serve.
What Makes a Frittata a Frittata? How Do you Make a Frittata?
Frittata, in Italian, translates loosely to the word, “fried.” Using ingredients similar to an omelet, the eggs and other ingredients are mixed together and fried stove top for a few minutes before being transferred to a hot oven to rise and finish cooking.
The eggs puff up and encase the meat and veggies until they are light and fluffy and fully set up. It's typically served in wedge slices like a quiche with a simple side salad or serving of fruit.
Do Frittatas Have Carbs? How Many Carbs are in a Frittata?
The primary ingredient in frittata is eggs, which have a trace amount of carbs. Any additional carbs come from what other ingredients you decided to use. In this case, sausage, pepper and onions are used. For one serving, there are only 3 net carbs! Talk about a low carb meal!
What is the Difference Between an Omelet and a Frittata?
The primary difference between the two is the cooking method. Unlike a frittata, omelets start out with an egg base that cooks in a skillet. Then other ingredients are added to one side of the base while the opposite side flips over to envelope everything until the eggs finish cooking.
With a frittata, the meat, cheese and veggies cook first, then eggs are poured over the tops evenly and it's baked in the oven until done.
Do You Add Water or Milk to a Frittata?
Full fat dairy is really crucial to a good frittata. It provides body and richness to the eggs you just can't get using water.
How Do You Know a Frittata is Done?
Because you finish the dish off in the oven, you'll want to make sure you cook it long enough for the eggs in the center of the skillet to set up.
To make sure it's done, just jiggle the pan to see if the eggs are set. If you're still unsure, you can take a small sharp knife and cut a small slit right in the middle to check and see if the eggs are still runny.
If you find that the edges are becoming too brown before the center is done, you may want to tent the edges with aluminum foil until it finishes cooking.
Tips for Making the Perfect Sausage and Peppers Frittata
- Cook your meat and veggies first: Eggs cook quickly. So, you’ll want to make sure you’ve precooked the meat and sauteed the veggies until tender before adding the eggs.
- Space out the ingredients: Once the eggs have been poured, things can shift around in the skillet. So, make sure you evenly distribute them before the eggs have time to set up. You want to make sure every bite has a little bit of each ingredient.
- Change it up: Keep things interesting by using which ever veggies, cheese or meat you have on hand. I love adding fresh mushroom and jalapeño peppers to mine.
- Use the right pan: You'll be transferring the skillet from the stove straight to the oven so make sure you’re using a pan that can tolerate the heat from both sources. I also prefer to use a heavy bottom skillet, so the eggs cook gently and don’t become to brown on the bottom before they are done in the middle.

Ingredients
- ½ pound Italian sausage, ground
- 1 cup baby spinach

Julianne, I loved this recipe SO much, I made it 3 x in a row - 2 keto, and once in a pie shell for family brunch. It was delicious! Got rave reviews from everyone, and it is now my go-to brunch recipe. I got everything chopped in advance, and it works out perfectly for two recipes since yours calls for halves of everything, and half of a lb of sausage too. I just put the other halves in the freezer, then thawed and squeezed water out beforehand. Thank you so much for a GREAT recipe!
