If you’re looking for a quick and easy low carb dinner that doesn’t take a lot of effort, you’re going to love this recipe. Although it’s easy to make, it honestly tastes like it took hours to make.
I take tender bite-size pieces of chicken, give them a quick sear to lock in flavor and keep them juicy, then combine them with caramelized mushrooms and onions smothered in the most flavorful sauce ever.

As I said, it’s unbelievably quick and easy to make, but also special enough to serve company. It’s great all on it’s own, or you can serve over cauliflower rice, zucchini noodles or even spaghetti squash to make it a complete meal.
🛒 Ingredients for Chicken Mushroom Stroganoff
- Chicken
- Chicken broth
- Mushrooms
- Sour cream
- Onion
- White wine
- Garlic
- Butter
- Olive oil
- Parsley
- Worcestershire sauce
- Dijon mustard
- Xanthan gum
- Salt
- Ground black pepper

🔪 How to Make Simple Chicken Stroganoff
Heat a large skillet to medium high and add in the olive oil, chicken, half the salt and pepper.

Sear the chicken on all sides until it’s almost cooked through. Then remove the chicken and set it aside.

Add in the mushrooms and onions, then sauté for several minutes, until they start to caramelize. Add in the remaining salt.

Make a well in the center and add in the garlic. Sauté for about 30 seconds, making sure not to brown it, or it will become bitter.

Pour in the white wine to deglaze the pan, scraping up the brown bits of flavor.

Simmer until the wine reduces by half, then pour in the chicken broth and simmer uncovered for 5 minutes.

Add in the sour cream and once melted, whisk in the xanthan gum.

Add the chicken back in, mix to combine and simmer for another 2 minutes or until the chicken is cooked through and the sauce has thickened.

Sprinkle the parsley over the top and serve.

Store leftover stroganoff in an airtight container for 3 days in the fridge or freeze.

💡 Tips for Making the Best Chicken Stroganoff Recipe
- Don’t overcook the chicken when you are searing it. You want the skillet to be nice and hot so that it sears quickly, giving it nice color and flavor, without overcooking the chicken or it will become tough.
- Allow the mushrooms and onions to develop some good color. This will help give the sauce such a nice flavor that you would be missing out on otherwise.
- Don’t be tempted to add the salt when you first add in the mushrooms and onions. What will happen if you do, it will help draw out the moisture in the mushrooms and prevent them from getting caramelized, which is what gives them and the sauce great flavor. Adding the salt towards the end of sautéing them seasons the mushrooms, without making them watery.
- Be patient once you whisk in the xanthan gum and are waiting for the sauce to thicken. It might be tempting to add a little more, but it will thicken, trust me. If you do add more, the sauce can take on a strange gummy texture and will ruin your dish. If you’ve ever worked with xanthan gum before, you know what I mean. It goes from perfect to gummy real quick!
- You might also be tempted to add more sour cream, but this will mellow out the richness of the sauce, so I don’t recommend it. You’ll still get that classic tang from the sour cream, without compromising the flavor of the sauce.

🔄 Substitutions and Additions for Beef Stroganoff with Chicken
- If you don’t want to use white wine, you can substitute with more chicken broth.
- For some added herbs you can add in some dried thyme, while you cook the sauce. 1/2 teaspoon should be plenty.
- Don’t have sour cream? You can use Greek yogurt instead. Mascarpone cheese will also work really well, just make sure it’s at room temperature before adding it into the skillet.
- Chicken is not the typical protein for this dish, beef is, but if you don’t have chicken or prefer beef, you can add it in one of a few ways. First, you can use ground beef which you would brown before adding the mushrooms and onions, then follow the rest of the recipe. Second, you can use roast beef from the deli. If you do this, add it after the mushrooms and onions are caramelized and just before pouring in the chicken broth. Third, you can use steak that you’ll want to cut in small bite-size pieces and cook them the same way as the chicken.
- If you can’t find baby bella mushrooms, you can use white mushrooms instead. You also can chop the mushrooms rather than slicing them if that’s what you prefer. Just be sure to get some good color on them for the flavor.

What’s the secret to a flavorful stroganoff?
It starts with getting a good sear on the chicken. Then when you add in the mushrooms and onions, they are cooking in the flavorful bit (fond) that the chicken left behind. Sautéing the mushrooms and onions until they are caramelized builds even more flavor.
Deglazing the pan with white wine also lifts that fond off the pan and gives the sauce a deep, rich flavor. So by the time you add in the chicken broth, you’ve already got a ton of flavor in your pan.
What are common mistakes making stroganoff?
Not allowing building up those layers of flavor that I mentioned above. I cannot stress enough what a huge difference it will make in your final dish. It’s absolutely worth the effort, trust me!
