If you’re looking for a new way to prepare cauliflower rice, look no further! I will admit as I was coming up with this recipe, I was a little unsure how it might turn out. After all, I typically serve cauliflower rice piping hot and don’t care for it cold, or even at room temperature.

That is, until I made this dish! It starts with cooked cauliflower rice that is still warm, with all the classic Greek salad ingredients adding in and my homemade Greek dressing poured over the top and tossed. The warm cauliflower absorbs the dressing and it becomes SO flavorful, you won’t believe how good it actually is.

It reminds me of a pasta salad, with fresh crisp veggies, creamy cheese and briny olives tossed in a dressing. If you like Greek salads, you have got to give this a try, it’s honestly fantastic!

🔪 How to Make Greek Cauliflower Rice

Prepare the Greek Salad Dressing, then set it aside to allow the flavors to meld while you make the cauliflower rice.

Cook your cauliflower rice in the microwave for 4 1/2 minutes, then pour into a large mixing bowl and allow it to cool slightly while you prepare the rest of the ingredients.

Add the red bell pepper, cucumbers, Kalamata olives, red onion, feta cheese and mint over the cauliflower rice.

Pour the dressing over the top, then toss to combine.

It’s ready to serve at room temperature or you can chill it in the fridge until you are ready to serve it. It is best served at room temperature.

💡 Tips

  • If you don’t have frozen cauliflower rice, you can either buy raw riced cauliflower or rice it yourself using a box grater or food processor.  Then either steam it in the microwave or cook it in a skillet.
  • If you need to prepare this salad in advance, you can cook the cauliflower rice, store it in a container in the fridge.  Then chop all your remaining ingredients, except for the mint, and store it in a separate container.  Prepare the Greek dressing and store that in an airtight jar.  When you are ready to serve the salad, warm up the cauliflower, add it to a large bowl, add everything else over the cauliflower, toss and serve.
  • It’s important to add all the ingredients to warm cauliflower, as it will absorb the dressing better and give the entire dish more flavor.
  • Try to buy feta cheese in the block form and crumble it yourself. In my opinion, it tastes more fresh and is creamier this way.
  • Don’t skip the mint.  It might seem odd, but mint is used often in Greek dishes and I promise you it really enhances the entire dish in a way you might not be used to.  Once you do it, you will want to add it in more dishes, trust me.

🔄 Substitutions and Additions

  • A mix of bell peppers would work great in this dish. So if you prefer other colors, like yellow, orange or even green, add them in!
  • Halved cherry tomatoes would also work really well in this recipe, so if you have some on hand, toss them in.
  • If you don’t have Persian cucumbers, half a large English cucumber will work well instead. These are preferred over the standard waxy cucumber, that you’d want to peel before adding. The skins of the English and Persian cucumbers are not only edible, but they are nutritious and add nice color, so use either one if you can.
  • For a little more of a briny bite, you can add in some capers, though not traditional in a Greek salad.
  • If you don’t like mint or can’t find fresh mint, you can use fresh Italian parsley instead. Do try to get the mint though, it makes a difference.
  • I use Kalamata olives in this recipe, but feel free to add other olives that you prefer, Castelvetrano olives would also be perfect.

Oh yes, it’s actually one of the Keto superfoods because of it’s nutritional value. It’s also easy to add different flavorings to change this up and keep it interesting.

Can diabetics have cauliflower rice?

Absolutely! It’s super low in carbs, high in fiber and has a low glycemic index, making it ideal for diabetics.

Ingredients
 

  • 20 ounces frozen riced cauliflower
  • 1/2 batch Greek Salad Dressing
  • 2 Persian cucumbers, chopped
  • 1/2 red bell pepper, diced
  • 1/3 cup feta cheese, crumbled
  • 1/3 cup Kalamata olives, halved
  • 1/4 cup red onion, diced
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon dried oregano
