Smash burgers are already an American favorite, but turning them into tacos takes things to a whole new level of fun. My Keto Smash Burger Tacos load tender, juicy beef onto warm tortillas, then top them with cheddar, shredded lettuce, dill pickles, and plenty of Big Mac sauce. Every bite has that perfect balance of savory, tangy, cheesy, and crisp.

One of the things I love the most is they’re fast, easy, and made with simple ingredients I typically keep on hand.  To make things even easier, you cook the beef right on the tortilla for a crispy, golden base that holds everything together. Whether it’s a weeknight dinner or a casual weekend bite, these tacos will disappear as soon as they hit the table.

🔪 How to Make Smash Burger Tacos

Divide the ground beef into 8 pieces (2 ounces each) and roll them into a ball shape.

Place one onto a piece of parchment paper, then top with the tortilla.  Using a smash burger press, push down on the tortilla, flattening and spreading the ground beef.

Flip the tortilla over and carefully remove the parchment paper.

Add garlic salt and pepper sprinkled evenly over the beef.

Heat a griddle pan or large skillet to medium and place the tortilla in the skillet with the beef side down.

Cook for 2-3 minutes, pressing down again using the press.

Once cooked through, flip over, add a slice of cheddar cheese and continue cooking, just until the cheese has melted.

Remove from the heat, add the shredded lettuce, pickles and a drizzle of the Big Mac Sauce over the top and serve.

You can store leftovers in an airtight container for up to 3 days. Keep toppings separate for freshness. You can also freeze any extra cooked beef patties (without tortillas) for up to 2 months. Thaw, reheat and assemble the tacos when you’re ready to enjoy.

💡 Tips

  • Preheat your griddle or skillet before adding the beef so it sears right away.
  • Warm tortillas slightly before pressing the beef to prevent tearing.
  • You want thin patties. Remember you will serve them folded so there will be 2 layers.
  • Don’t overcook the beef; 2-3 minutes per side is plenty for tender, juicy burgers.
  • Keep the sauce chilled until serving for the best contrast against the hot burger.

🔄 Substitutions and Additions

  • Cheese: Swap cheddar for American, Swiss, or pepper jack for a different cheese profile.
  • Other veggies: Add a slice of fresh tomato for extra juiciness, sautéed onions for extra sweetness or sliced jalapeños for a little heat.
  • Bacon: Sprinkle cooked bacon pieces over the top before serving.
  • Chipotle: Try homemade Chipotle Aioli instead of Big Mac sauce for a smoky twist.

Why is My Beef Sticking to the Parchment Paper?

Make sure your beef is cold when pressing, and peel the parchment back slowly after smashing.

Can I Make These Without a Smash Burger Press?

Yes, a heavy spatula or small cast iron pan works well. Just press firmly and evenly.

Why Did My Tortilla Tear When Pressing?

It may have been too cold or dry. Warm it briefly before pressing to make it more pliable.

Can I Use a Different Ground Meat?

Yes, ground turkey, chicken, or pork work, but beef gives the most traditional flavor.
