    🛒 What’s in Mediterranean Sheet Pan Shrimp

    • Shrimp
    • Zucchini
    • Cherry tomatoes
    • Artichoke hearts
    • Red onion
    • Kalamata olives
    • Feta cheese
    • Olive oil
    • Dried oregano
    • Smoked paprika
    • Garlic salt
    • Ground black pepper

    🔪 How to Make Mediterranean Sheet Pan Shrimp

    Preheat oven to 425°F.

    Add the shrimp, zucchini, red onion, artichoke hearts, tomatoes and olives in a large mixing bowl.

    Pour the olive oil over the top, then sprinkle the garlic salt, smoked paprika, pepper and oregano over the top.

    Tip: If you like a little spice, you can add in some cayenne pepper or red pepper flakes.

    Mix until well combined, making sure everything is well coated in the olive oil and spices.

    Pour onto a baking sheet that’s been brushed with olive oil. Bake for 8 minutes on the upper ⅓ rack of your oven. Then increase the temperature to 450°F and roast for another 3-5 minutes or until everything is cooked through.

    Serve with the feta cheese crumbled over the top.

    How Do I Store Sheet Pan Shrimp?

    Fridge: Leftover Mediterranean shrimp will stay fresh in the fridge, in an airtight container, for up to about 3 days. 

    Freezing: It’s not recommended that you freeze leftover baked shrimp. They can become too tough or rubbery once they are frozen then thawed.

    Reheating: To reheat this shrimp dish, just place them back in a preheated oven, just until they are warm. You can also reheat them in the microwave.

    Are Shrimp Keto? How Many Carbs in Shrimp?

    Absolutely! Not only are shrimp very low carb and low calorie, they're packed with nutrition. The amount of protein in shrimp is very impressive, making up over 70% of their calories.

    Shrimp are very low in carbs. In fact, there's approximately 1 gram of carbohydrates in 6 ounces of cooked shrimp!

    Should You Peel Shrimp Before Baking?

    This is a personal preference, but in order for the shrimp to really soak up the seasonings and juices from the veggies, I always recommend peeling them. Plus, no one really wants to deal with trying to peel hot shrimp.

    Tips for Buying Shrimp

    • You’ll make prep work a cinch if you buy "easy peel," shrimp. They have the skin split down the back that make peeling a breeze. Personally though, I like to buy them already peeled and deveined to make my life easier.
    • If buying thawed shrimp from the seafood department, make sure they're firm in texture and do not feel slimy or have a strong "shrimpy" smell. That usually means they are not so fresh.
    • If you're buying frozen shrimp, you’ll want to read the label. Shrimp should be just that, shrimp. There should be no preservatives listed on the label.
    • Good quality shrimp, when cooked, will have a real sweet flavor. So, if you get some that tastes of chlorine or ammonia, which is sometimes used to clean them in some countries, you may want to try another brand.
    • Wild caught shrimp are going to be sweeter and are better quality than farm raised, so try to find those when you can. They'll keep for months in the freezer so stock up when you're able to find them.

    How Long Do Shrimp Take to Cook in a Pan?

    The cooking time can vary based on the size shrimp you buy as well as how many other items are on the pan with them. As a general rule for large-sized shrimp, it will take 12-15 minutes on 425°F, or 15-18 minutes on 400°F.

    How Do I Know My Shrimp are Done?

    The simplest way to know if baked shrimp is fully cooked is by the color of its flesh. Cooked shrimp should have an opaque white flesh with some pink and bright red accents. Raw shrimp will be whitish-gray in color. Cooked shrimp will also feel firm where raw shrimp feel much softer.

    You can also use an instant read thermometer. The USDA recommends that shrimp be cooked to at least 145°F before being eaten. This will ensure that bacteria are cooked out of the shrimp.

    Do They Have Shrimp in the Mediterranean?

    The Mediterranean Sea is home to some of the world’s best shrimp, called giant red shrimp or giant gamba prawn. It is a type of deep-water shrimp in oceans in tropical zones. They are not commonly found in our local grocery stores, but no worries. With all the other wonderful flavors in this recipe, you’ll never know the difference.

    Ingredients
     

    • 1 ½ pounds jumbo shrimp, peeled and deveined
    • 1 small zucchini, cut into half moons
    • 1 cup cherry tomatoes
    • 12 ounce jar artichoke hearts, halved
    • ⅓ red onion, sliced
    • ⅓ cup kalamata olives
    • ¼ cup feta cheese, crumbled
    • 2 ½ tablespoons olive oil
    • 1 teaspoon dried oregano
    • 1 teaspoon smoked paprika

      I made this tonight and it far exceeded my expectations! My and my husband’s recent blood work has us looking for healthier dishes. This one will be a regular at our table. I served it over brown rice like a ‘bowl’. The only change I made was cocktail tomatoes sliced into fourths because I didn’t have cherry. Still very sweet and gave it the flavor we needed. Thank you for sharing this one!

      Great dish, flavor is great and pretty simple to make. Served right on the baking sheet as it has a great presentation and allows people not to take what they don't like. Only change I made was doubling the shrimp

        I do not give weighed portions sizes but you can measure the cooked dish evenly into six portions. Each portion will include a mix of shrimp, vegetables, and toppings.

      Easy prep and delicious. Guests went back for seconds! Served with risotto. I added a chicken breast, fresh broccoli, used minced garlic instead of garlic salt. Will make again and will increase the amount of olives. Thanks for the recipe

      This was so delicious! I am hard to impress when trying a new recipe as it is written but I wouldn't make a change to this one! Okay I might add bell pepper next time! But the flavor had my palate doing the happy dance! Thanks for sharing!

        Thanks and yes, you sure can. Just be sure they are on the softer side, otherwise you might need to partially cook them first, so that everything cooks evenly.
