Who doesn’t love chicken spinach artichoke dip!?  It’s been one of my favorites for many years and was the inspiration for this casserole.  I take my traditional recipe and add shredded chicken to it, along with some heavy cream.  

I bake it in the oven with plenty of shredded mozzarella cheese on top and bake until it’s golden and bubbly!  And I think we all know picking off that cheese is the best part, right!? Also be sure to try my classic cold Spinach Dip!

This is honestly one of my favorite Keto chicken casseroles now!  It’s great for meal prepping because it freezes beautifully and makes 8 servings.  The taste is so amazing, even your non-Keto family is sure to love it.  

I made this super easy to put together using cooked chicken (you can use rotisserie), frozen spinach and artichokes in the jar.  My Spinach Artichoke Chicken Casserole is a great Keto dinner made in 30 minutes!

🔪 How to Make Spinach Artichoke Chicken Casserole

Preheat oven to 375°F.

Add the cream cheese, sour cream, heavy cream, mayonnaise, garlic, salt and pepper to a large mixing bowl and mix until combined.  

Then add in the rest of the ingredients, except for the mozzarella cheese.  

Mix well, then pour into a 9″ x 13″ baking dish that has been sprayed with nonstick spray. 

Top with the shredded mozzarella cheese and bake for 20 minutes.  

Increase the temperature to 400°F and bake for another 5 minutes or until the cheese is slightly golden and bubbly.  Allow to cool slightly before serving.

Store leftovers in the fridge for a few days or freeze.

Note:  The artichoke hearts that I used were in a jar, plain, not marinated.  You can use either canned or frozen (thawed), whichever is easier for you, just be sure to rinse them first.

Spinach Artichoke Chicken Casserole (Keto)

Ingredients
 

  • 4 cups cooked chicken, shredded/chopped
  • 9 ounce package frozen spinach, thawed and well drained
  • 14 ounces artichoke hearts (plain), chopped
  • 8 ounces cream cheese, at room temperature
  • 1 cup parmesan cheese, grated
  • 1 1/2 cups shredded mozzarella cheese
  • 2/3 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 cup mayonnaise, see my recipe
  • 3 cloves garlic, minced
  • salt and pepper to taste

Instructions

    This recipe was delicious. I gave it to a friend thst is on a Leto diet. She made it and shared some with me saying how delicious it was. Now I’ll make it at home for my family.

      1. I didn’t read it right, and put raw chicken in the mix and baking it now do you believe the chicken will be OK cooked with it? I put it on longer due to the raw chicken woops lol .

    This is amazing! I’m the only Keto eater in the fam, but they all liked it. I’m going to start making this for meal preps! We had to cook it and then reheat it because we ran out of time and had to leave and come back to eat, it reheats really well! I’m going to try adding some Italian Seasoning to it next time. 🙂

    1. Using sour cream only may work, but I have never made this recipe with anything other than mayo.

      1. Would Miracle Whip work? My mom’s the same way, she absolutely will not eat Mayo, but she likes Miracle Whip. (I’m a mayo gal, myself, but if I were to make this for her, I’d have to sub something in a little bit for her)

      2. Yes, you can. But keep in mind that Miracle Whip is fairly sweet, so it will change the flavors of the casserole slightly.

    This dish was delicious and easy to prepare. Easy on the wallet and I got most of the ingredients from Aldi. I used fresh spinach and I boiled my chicken in chicken broth- the taste is so yummy it is shocking.

    Absolutely delicious! Even my picky kids loved it! Only change I made was using fresh spinach instead of frozen. Just tossed it into the mixture and it turned out great! Definitely going into the rotation!

    This casserole is so delicious. Creamy. Comforting. I froze half since it’s just two of us. The only thing I did different was more garlic and I used fresh spinach chopped and thrown in. No need to cook it first. Came out perfectly! Will be added to our rotation! Thank you

    This is the best recipe I’ve made in a long time! Someone asked if it needed to be baked in the oven, so I started preparing it in a large frying pan. I mixed all of the cheeses together in the pan and warmed it up. In the meantime, I got the rest of the ingredients together. I drained the artichoke hearts, chopped the chicken, and got the spinach ready. I used fresh spinach, and knew that it would wilt and cook quickly. I should’ve chopped the artichokes before, but decided to chop them over the pan. I discovered that there was a lot of water still in them, but it didn’t thin out the sauce too much. It was plenty salty without any added salt from the cheese, so I only added the pepper. Fantastic recipe! Thank you!

    This is so delish! I will definitely be making it again. It makes a lot, so I will freeze half of it to enjoy later. The five minute prep is accurate, but only after you have shredded the chicken, rinsed and chopped the artichokes and squeezed the spinach.

  14. If I want to freeze this should I cook first and then thaw & reheat or freeze assembled and cook from frozen when ready to serve?

  15. Do you have this recipe for slow cooker. Summer is here in AZ. So I mostly use the slow cooker or toaster oven. I love artichoke and spinach combo.

    1. I do not have an actual recipe. But you could just cook it in stages. Slow cook the chicken, then shred it and add in the rest of the ingredients before topping with cheese. I have never tried it in a slow cooker. but I think it would work.

  16. I am allergic to artichoke what would you recommend as a replacement Thank you for sharing all your recipes I make the pan and then divided then into smaller dishes as I am single and enjoying the Keto cooking life style

    1. If you are allergic, you could just leave them out. With you being allergic to them, I am sure what ever veggie you typically use in place of artichoke recipes would work. Maybe extra spinach?

      1. At what stage do you freeze it? Maybe right before adding the mozzarella? I prefer to pop it in the oven to bake after thawing?

      2. You can freeze cooked leftovers or the unbaked casserole. I’ve done both and it’s good both ways.

    1. Without the chicken, this recipe would actually be more like a dip. If you want it a little more like a casserole without the chicken, I would just add more spinach and artichokes until it reaches the consistency you desire.

    Delicious! It was a smash hit with everyone who came to dinner and many of them are outstanding cooks!
    Suggestions: I doubled the amount of garlic and used chicken thigh meat (always tender and flavorful). I actually think I will double the amount of spinach next time I make it.
