Who doesn’t love chicken spinach artichoke dip!? It’s been one of my favorites for many years and was the inspiration for this casserole. I take my traditional recipe and add shredded chicken to it, along with some heavy cream.
I bake it in the oven with plenty of shredded mozzarella cheese on top and bake until it’s golden and bubbly! And I think we all know picking off that cheese is the best part, right!? Also be sure to try my classic cold Spinach Dip!

This is honestly one of my favorite Keto chicken casseroles now! It’s great for meal prepping because it freezes beautifully and makes 8 servings. The taste is so amazing, even your non-Keto family is sure to love it.
I made this super easy to put together using cooked chicken (you can use rotisserie), frozen spinach and artichokes in the jar. My Spinach Artichoke Chicken Casserole is a great Keto dinner made in 30 minutes!

🔪 How to Make Spinach Artichoke Chicken Casserole
Preheat oven to 375°F.

Add the cream cheese, sour cream, heavy cream, mayonnaise, garlic, salt and pepper to a large mixing bowl and mix until combined.

Then add in the rest of the ingredients, except for the mozzarella cheese.

Mix well, then pour into a 9″ x 13″ baking dish that has been sprayed with nonstick spray.

Top with the shredded mozzarella cheese and bake for 20 minutes.

Increase the temperature to 400°F and bake for another 5 minutes or until the cheese is slightly golden and bubbly. Allow to cool slightly before serving.

Store leftovers in the fridge for a few days or freeze.

Note: The artichoke hearts that I used were in a jar, plain, not marinated. You can use either canned or frozen (thawed), whichever is easier for you, just be sure to rinse them first.

My husband is allergic to spinach, any other suggestions?
You can just omit it. It will still be delicious.
This recipe was delicious. I gave it to a friend thst is on a Leto diet. She made it and shared some with me saying how delicious it was. Now I’ll make it at home for my family.
Thank you. It really is a hearty and cozy meal, even for those not on a low carb diet.
This is the best recipe I have ever used. Its so tasty and healthy!! Thank you!!!
That is so awesome to hear. Thank you for the kind review.
I didn’t read it right, and put raw chicken in the mix and baking it now do you believe the chicken will be OK cooked with it? I put it on longer due to the raw chicken woops lol .
I hope it turned out great. I’ve never tried mixing in raw chicken before.
This recipe was so good!
Thank you so much.
Excellent flavor! I added some chopped onion and green pepper for added serving of vegetable.
So happy you enjoyed it.
Delicious a favorite that will go into my regular rotation now!
I love hearing this! I am so glad you enjoyed it.
Could you use fresh spinach? 🤔
Absolutely
This dish was amazing! it’s the newest on my list of favorites!!!
Thank you, it’s my top favorite too!
This is amazing! I’m the only Keto eater in the fam, but they all liked it. I’m going to start making this for meal preps! We had to cook it and then reheat it because we ran out of time and had to leave and come back to eat, it reheats really well! I’m going to try adding some Italian Seasoning to it next time. 🙂
It is one of my all-time favorites. I am so glad you enjoyed it too.
Could you freeze before baking?
I’ve not tried that before, but I don’t see why you couldn’t.
We love this recipe! I have made it often. Great Keto recipe,
Can 1/2 and 1/2 be used instead of heavy cream? Appreciate a quick response- thank you!!
If it fits into your macros, absolutely it will work!
Thank you for your quick reply! Can’t wait to try this this weekend for company. One more question!
Can you make this a day or two ahead and refrigerate before cooking? Or would it be better to cook and refrigerate for a few days then reheat? Thanks in advance!
Honestly, either way would work, though I’d probably choose to bake it when I’m ready to serve it. I hope you enjoy it!
We all really enjoyed this! I used canned chicken breast and seasoned with Old Bay and some Adobo. I also added Italian Bread Crumbs with the cheese topping. Your recipe is my favorite version of this dish! Thank you!
You are so welcome! I am so happy you enjoyed it.
Made this tonight and we loved it. It was easy to put together and made getting dinner on the table easier than normal for me. It was quick to put together and I will definitely be keeping this as one of my favorites!
That is awesome to hear. So happy that it was easy and that your family loved it.
My favorite casserole, just delicious. Everyone who has ever eaten it agrees. Thank you so much for this awesome recipe!
That’s so awesome to hear. Thank you for the great rating. It has to be one of my top favorites as well.
What else can I sub for Mayo? Extra sour cream? I absolutely HATE mayo!
Using sour cream only may work, but I have never made this recipe with anything other than mayo.
Would Miracle Whip work? My mom’s the same way, she absolutely will not eat Mayo, but she likes Miracle Whip. (I’m a mayo gal, myself, but if I were to make this for her, I’d have to sub something in a little bit for her)
Yes, you can. But keep in mind that Miracle Whip is fairly sweet, so it will change the flavors of the casserole slightly.
Loved this recipe!! Shared with my sister who was sure about the artichokes but she loved it too.
That’s awesome! I am so glad you both loved it.
This was delicious! The only thing I added were some red chili flakes on top after it was finished! So good, definitely a recipe to be added to my book!
I am so happy you enjoyed it.
This was so so good! Best part was how easy it was to do. My whole family enjoyed and had seconds!
I am so happy to hear that. It’s always a win-win when the whole family enjoys it.
Crazy good a new favorite
That’s awesome! I am so glad you love it.
I make a few changes to add additional flavor.
I use chive whipped cream cheese and add bacon !!
It’s a crowd favorite!!
I’m glad you enjoyed it.
This dish was delicious and easy to prepare. Easy on the wallet and I got most of the ingredients from Aldi. I used fresh spinach and I boiled my chicken in chicken broth- the taste is so yummy it is shocking.
So glad you enjoyed it! I love to make it up in smaller size pans to freeze for meal prep.
This is a great recipe, thank you! I used canned chicken for convenience. Still tastes great (Fresh chicken might taste better, will try next time!).
Fresh chicken always tastes better to me, but I am really happy you enjoyed it with canned.😊
Absolutely delicious! Even my picky kids loved it! Only change I made was using fresh spinach instead of frozen. Just tossed it into the mixture and it turned out great! Definitely going into the rotation!
YAY! I call that a win! I am so glad everyone enjoyed it.
Is this diabetic friendly? I love everything in this recipe but I’m having to learn to cook for diabetics, it’s hard because I’ve always cooked mostly country style..
This casserole is so delicious. Creamy. Comforting. I froze half since it’s just two of us. The only thing I did different was more garlic and I used fresh spinach chopped and thrown in. No need to cook it first. Came out perfectly! Will be added to our rotation! Thank you
That’s so awesome to hear! I am so glad you enjoyed it. It really is a great meal prep recipe.
I’m confused on the measurements. I don’t know what 0.19 cups are or any of them. Help??
Where are you seeing that?
Yep…died and went to heaven. This was so good, and better the next day. I’m resisting from not eating all of the leftovers and saving some for the hubs.
That is so awesome to hear. Thank you for letting me know! I always love this casserole the next day too.
So delicious!! I made it once on its own and once with a bag of cauliflower rice mixed in to add some volume.
Sounds like a great idea and super filling!
This is the best recipe I’ve made in a long time! Someone asked if it needed to be baked in the oven, so I started preparing it in a large frying pan. I mixed all of the cheeses together in the pan and warmed it up. In the meantime, I got the rest of the ingredients together. I drained the artichoke hearts, chopped the chicken, and got the spinach ready. I used fresh spinach, and knew that it would wilt and cook quickly. I should’ve chopped the artichokes before, but decided to chop them over the pan. I discovered that there was a lot of water still in them, but it didn’t thin out the sauce too much. It was plenty salty without any added salt from the cheese, so I only added the pepper. Fantastic recipe! Thank you!
I am so happy you enjoyed it. It has always been a huge hit with my family.
Absolutely Delicious!! Perfect weeknight meal!!
<
Thank you so much.
This is amazing! You have to make it…even our 7 year old loved it. Thats a win win!
Wow! That is so GREAT! I am so glad you love it.
This is so delish! I will definitely be making it again. It makes a lot, so I will freeze half of it to enjoy later. The five minute prep is accurate, but only after you have shredded the chicken, rinsed and chopped the artichokes and squeezed the spinach.
I’m glad you enjoyed it!
Can you use any mayo?
Sure! If you have brand you prefer, store-bought will work just fine.
If I want to freeze this should I cook first and then thaw & reheat or freeze assembled and cook from frozen when ready to serve?
I would bake it first, freeze it then reheat the cooked casserole.
Do you have this recipe for slow cooker. Summer is here in AZ. So I mostly use the slow cooker or toaster oven. I love artichoke and spinach combo.
I do not have an actual recipe. But you could just cook it in stages. Slow cook the chicken, then shred it and add in the rest of the ingredients before topping with cheese. I have never tried it in a slow cooker. but I think it would work.
I am allergic to artichoke what would you recommend as a replacement Thank you for sharing all your recipes I make the pan and then divided then into smaller dishes as I am single and enjoying the Keto cooking life style
If you are allergic, you could just leave them out. With you being allergic to them, I am sure what ever veggie you typically use in place of artichoke recipes would work. Maybe extra spinach?
Added some crispy bacon to the mix before baking
Sounds great!
You could try hearts of palm they have a similar taste and texture if I remember correctly
Hearts of palm would be a good substitute! Good idea.
I didn’t have any chicken so I used ground beef. I also doubled the spinach and garlic. It came out great! Thanks so much for your recipes. Everything I have tried is wonderful.
That is so great to know. I never thought about using ground beef but that sounds yummy.
I made this tonight. It was so delicious! Thank you so much for sharing 🥰
You are so welcome. I am so happy you enjoyed it.
This is very simple. Tastes great and feels fancy. We’re not keto so I think I’ll be serving leftovers over top baked potatoes!
This is always a huge hit, even with my friends and family that aren’t following a larb carb diet. I am so glad you all enjoyed it.
Made this for my whole family this Sunday for the first time and it was delicious. It will now be added to our meal rotation.
That’s awesome! I am so glad you all loved it. It makes a great meal prep option too. I usually always have some frozen in case I need a last-minute meal.
At what stage do you freeze it? Maybe right before adding the mozzarella? I prefer to pop it in the oven to bake after thawing?
You can freeze cooked leftovers or the unbaked casserole. I’ve done both and it’s good both ways.
made thos recipe the other day and it was devoured by my family… I was craving spinach and artichoke dip, but didn’t want an appetizer for a meal… adding the chicken was a perfect idea to make it a “entree,” so to speak… very good and has already been requested as a repeat family dinner
This is AWESOME to hear! Thanks so much for sharing with me how much you all enjoyed it. I have to say, it’s on regular rotation at my house as well.
Tonight, I made this for the second time. We love this! Thanks for the recipe and God bless!
Thank you, I love hearing that! I love it too and it’s so great for meal prep!
So Delicious My Family LOVED it…
YAY! I love hearing anytime a recipe is whole-family approved.
This sounds delicious. What did you serve with this?
It’s a complete meal with the spinach and the artichokes but if you want a little something to go with it, a side salad would be a great choice.
Delicious and easy to make! Hubby loved it and even asked for it for left-overs! Shared with all my adult children too!
I love hearing this! I am so glad you all enjoyed it.
I am excited to make this for Thanksgiving. If I were to omit the chicken for vegetarians, what would be the quantities of the other ingredients? Thank you
Without the chicken, this recipe would actually be more like a dip. If you want it a little more like a casserole without the chicken, I would just add more spinach and artichokes until it reaches the consistency you desire.
Thank you for your prompt reply and the tip!
Made this for dinner tonight & everyone in my family of 5 LOVED this recipe! I used a bag of fresh baby spinach instead of frozen. I did not cook the spinach before adding to ingredients. It turned out delicious! Thanks so much!
You are so welcome. I am glad you guys loved it!
So, So good!!
Thank you so much! I’m glad you enjoyed it.
Delicious! It was a smash hit with everyone who came to dinner and many of them are outstanding cooks!
Suggestions: I doubled the amount of garlic and used chicken thigh meat (always tender and flavorful). I actually think I will double the amount of spinach next time I make it.
I am so glad you enjoyed it! I love using chicken thighs sometimes as well.
Such an AMAZING tasting casserole!! And super easy to make. I could eat this everyday. I highly recommend trying it. ❤❤❤
Thank you SO much for commenting! I love making it to freeze so I can have it on hand in a pinch. I am go glad you enjoyed it.
How much is 1 serving? I/2 cup? 1 cup?
Sorry, I don’t have an exact measurement in cups, the serving size is simply 1/8th of the recipe.
Amaaaaaazing!! That is all I can say!
Yay, that’s wonderful to hear!
This was delicious. Will definitely make again
Glad you liked it, thanks for letting me know!
Can I use fresh spinach instead of frozen?
Sure, but I would cook the spinach first, squeeze out all the liquid, then add to the mixture as noted in the recipe.
