This low carb casserole has such great flavor and is so easy to make! This is a great dish to make when you have leftover baked ham! You can also use in this Easy Keto Breakfast Casserole or Roasted Cauliflower Ham and Cheese Casserole.
I recently made some improvements to this Keto casserole. The old recipe was great, don't get me wrong, but after making my Chicken Cordon Bleu, I wanted to bring some of those elements to this easy Keto chicken casserole.
So what did I change? I increased the amount of chicken slightly, roasted the cauliflower first to give it more flavor, swapped out the asiago cheese for gruyere, increase the amount of dijon and a few other minor changes. The result is absolutely delicious and I'm convinced you are going to LOVE it!
🛒 What's in Keto Chicken Cordon Bleu Casserole
- Chicken
- Ham
- Cauliflower
- Swiss cheese
- Heavy cream
- Mascarpone cheese (or cream cheese)
- Gruyere cheese (or Swiss)
- Dijon mustard
- Olive oil
- Lemon thyme (or thyme)
- Garlic salt
- Fresh parsley
- Salt
- Ground pepper

🔪 How to Make Keto Chicken Cordon Bleu Casserole
Preheat oven to 425°F. Add the cauliflower to a mixing bowl and drizzle the olive oil, salt and ground black pepper over the top.
Toss to combine, then pour onto a small baking sheet that's been brushed with olive oil.
Roast in the oven for 15 minutes, tossing halfway through. Remove from the oven, lower the temperature to 375°F and add the cauliflower to a large mixing bowl.
Tip: Roasting the cauliflower before adding it to the casserole helps give it extra flavor.
In the same bowl, add in the chopped ham, shredded chicken, roasted cauliflower, parsley and thyme. Set aside while you make the sauce.
In a saucepan over medium low heat, add in the heavy cream, mascarpone cheese, dijon mustard and garlic salt. Whisk until the mascarpone has melted.
Add in the gruyere cheese and continue to cook just until melted. Remove from the heat and pour the sauce over the top, then toss until everything is well coated.
Tip: If you can't find gruyere cheese, you can use swiss cheese instead. The gruyere has a slightly nutty flavor that is superior to swiss in my opinion, so I highly recommending using it if you can.
Pour the mixture into a 9 x 13 casserole dish that's been brushed with olive oil.
Tip: You can also use an olive oil non-stick spray to help prevent your casserole from sticking.
Then place the swiss cheese slices over the top.
Tip: I used baby swiss cheese because I prefer it to regular swiss, but you can use either one.
Bake for 20 minutes, then increase the temperature to 425°F and bake an additional 10 minutes or until the top is golden and bubbly.
Allow to cool slightly before cutting into and serving.

The basic ingredients for chicken cordon bleu are chicken, ham and cheese. Since this recipe is the casserole version, the cheese was also added to a creamy sauce and cauliflower was also added to make it a complete meal.

The "bleu" gets its name from the French term "blue ribbon".
What is Cordon Bleu Sauce Made of?
Cordon bleu sauce is a cream sauce made from milk, flour, butter, dijon mustard, garlic, parmesan and spices. I put my own spin on it using heavy cream, gruyere cheese, dijon mustard, garlic salt and mascarpone cheese.

In this casserole version of chicken cordon bleu, there are 501 calories and 3 net carbs.
Can you Freeze Chicken Cordon Bleu?
Yes, you absolutely can. Some recipes with heavy cream do not freeze well. That is not the case with this Keto casserole. Because the cream is mixed with other ingredients to make the sauce, this helps to stabilize the cream and will prevent it from separating when thawed.
Allow the casserole to cool to room temperature before moving it to the freezer. You can use these freezer safe containers for leftovers, they work beautifully!
Tips for Making This Gluten Free Chicken Cordon Bleu Casserole
- In order to keep this casserole as low carb as possible, use a Keto friendly baked ham. Always read the labels on ham to check for any added ingredients or sugars you want to avoid.
- It's always better to grate your own cheese. Pre-grated cheese usually has anti-caking ingredients that are not acceptable on Keto or low carb diets.
- If you're going to be short of time, this casserole can be made the night before. Assemble all the ingredients, wrap it or cover it well and place it in the fridge. All that's left is baking it, when you're ready.
Substitutions for Low Carb Chicken Cordon Bleu Casserole
- If the rotisserie chicken where you shop has sugar added, you can always cook your own. You can use dark meat, white meat, or a combination of both.
- This recipe calls for fresh cauliflower. To save a little time, you can buy the pre-cut florets, then roast them.
- If you don't have mascarpone, you can substitute it for cream cheese. The cream cheese will have less creaminess and a more tart flavor, but it's a suitable substitution. Because cream cheese has more carbs, be sure to adjust your macros accordingly.
- Provolone cheese can be used instead of Swiss without it drastically changing the flavor profile.
- You can also use swiss cheese instead of gruyere if you'd like, though I highly recommend gruyere because it adds a slightly nutty flavor to the sauce.

the flavor was good but next time I wouldn't use as much garlic salt. too salty for my buds. the sauce came out so perfect and creamy but after cooking it, it seemed that there was so much liquid in the bottom of the casserole dish, I felt that it lost its creaminess. I followed the directions exactly so I'm not sure where I went wrong.

Could frozen cauliflower be used?

Yes, just make sure it's thawed and drained of any moisture that's in the bag before adding it to the casserole.

We loved this recipe! I used the philly cheese and used Parmesan instead of Asiago because it’s what I had on hand. Because I was short on time, I used frozen caulirice. 😉 Also topped with crushed pork skins as someone else suggested. I will be putting this in my monthly rotation. Thank you!

Wow the flavors in this dish are so good! I was looking through the fridge to see what I had to use up and saw I had everything on hand to make this casserole.
