Luckily, with this recipe, you can enjoy those rich vanilla flavors even if you're on a Keto or sugar-free diet. Made with a few simple ingredients, this smooth and creamy custard is an easy and delicious dessert you can serve without any guilt.

    One of the things you'll love most is that you can add different toppings or mix-ins to create all sorts of different desserts. Whether you’re craving it with fresh berries, a rich caramel sauce, or just as it is, the possibilities are endless. Make sure to check out some of the delicious suggestions I included below.

    🛒 Ingredients for Sugar-Free Custard

    • Heavy cream
    • Unsweetened coconut milk
    • Egg yolks
    • Allulose or other sweeteners
    • Vanilla
    • Salt

    🔪 How to Make Keto Custard

    Add the heavy cream and coconut milk to a saucepan and heat until small bubbles start to form around the edges, but do not boil.

    In a mixing bowl, add in the egg yolks, allulose, salt, and vanilla bean paste, then whisk to combine until pale in color (about 2 minutes).

    If using vanilla extract, wait to add until the custard has been cooked.

    Slowly whisk a ladle full of the hot cream into the egg mixture to temper the eggs.

    Slowly pour the tempered egg mixture into the saucepan while whisking.

    Simmer the custard, whisking often, for about 8–10 minutes or until thickened enough to coat the back of a spoon.

    Remove from the heat and if you are using vanilla extract, whisk it into the custard.

    Pour the custard through a fine-mesh sieve into a bowl. This is to help ensure a smooth texture without any lumps.

    Cover with plastic wrap, making sure it’s touching the top of the custard.  This will help prevent skin from forming.

    Chill in the fridge for at least 4 hours or overnight.

    Once it has thickened and set, serve with your choice of toppings.  You can also serve while still warm, pouring it over brownies, cake, pie or some fresh berries.

    ☑️ Storage Instructions

    Leftover custard can be stored in the fridge (covered tightly with plastic wrap) for up to 3–4 days. When ready to serve, you may want to give it a good stir to restore its creamy texture.

    🍴 Ways to Serve Custard

    • Individual cups or jars: Serve custard in small, elegant cups or glass jars for a personal touch 
    • Family-style: Present the custard in a large, decorative serving bowl or a shallow dish. Allow guests to scoop out their own serving.
    • Layered in a trifle: Create a trifle by layering the custard with pound cake, ladyfingers, or brownies.
    • Custard tart: Pour the custard into a pre-baked pie shell and let it set until firm in the fridge.
    • Custard shots: Serve the custard in shot glasses for a fun, bite-sized dessert option. This can be especially great at parties or events when there are other desserts to choose from.

    💡 Tips for Making the Best Vanilla Custard

    • High-quality ingredients: Since this recipe has few ingredients, using high-quality heavy cream, coconut milk, and vanilla can make a significant difference in the flavor.
    • Use gentle heat: When heating the cream and coconut milk, do it slowly over medium heat to avoid scorching.  
    • Whisk frequently: When combining the hot cream with the egg mixture, whisk constantly and pour slowly to prevent the eggs from scrambling.
    • Check for doneness: To know if the custard is thick enough, run your finger through the custard on the back of a spoon. If it leaves a clear path, it's done.
    • Avoid overcooking: Overcooking can cause the custard to curdle. As soon as it thickens and can coat the back of a spoon, remove it from heat.
    • Let it cool: Let the custard cool slightly before covering it with plastic wrap. This helps to avoid condensation, which can make the custard watery.

    Ingredients
     

    • 1 ½ cups heavy cream
    • 1 cup unsweetened canned coconut milk
    • 4 egg yolks
    • ⅔ cup allulose, or ½ cup monk fruit
    • 1 teaspoon vanilla bean paste, or 2 teaspoons vanilla extract

    Instructions
