This strawberry coconut mousse is the ultimate treat for those times when you’re craving something light and refreshing. With its creamy texture and sweet strawberry and coconut flavor, it’s like a delicious bowl of fruity goodness that you can enjoy without any guilt.
The great thing about this mousse recipe is that it’s super easy to whip up, yet it makes a sweet, rich dessert, perfect for a decadent treat. Chill it in the fridge, and when you’re ready to serve it, it’s ready to go with a sprinkle of shredded coconut on top.
This mousse was inspired by my Strawberry Coconut Cream Bars. I wanted the same wonderful flavors, but in a dessert that was quick and easy to prepare. The texture is similar to a no bake cheesecake and only takes 5 minutes to make. It could not be easier!

🔪 How to Make Keto Strawberry Mousse
Refrigerate a can of full fat unsweetened coconut milk over night so that the cream separates from the water and solidifies. The cream at the top is what you want, should be thick and creamy. Once the cream has separated, measure out ½ cup and discard the water.
Add all of the ingredients into the bowl of a food processor and process until smooth and creamy.
Scrape down the sides and continue mixing until well combined. Allow to set up in the fridge before serving.
Serve with shredded coconut sprinkled over the top and garnish with a strawberry.

Can you use ricotta instead of mascarpone?

I have not tried using ricotta in this mousse recipe. I would imagine it would be a little too heavy, but you can certainly try.
