Almond Joys are one of the most well-known and most beloved candy bars. It’s for good reason too. Who wouldn’t love a sweet coconut creamy filling in encased in a dark chocolate coating? Unfortunately, traditional Almond Joys are loaded with sugar, which those of us on keto try to avoid.

This amazing recipe takes all the same wonderful flavors of the famous Almond Joy and makes a keto-friendly and low-carb fudge!  Smooth and creamy, dark chocolate with finely shredded coconut and topped with chopped toasted almonds make this a guilt-free sweet, and decadent treat!

🔪 How to Make Sugar-Free Almond Joy Fudge

Preheat oven to 325°F.

Spread out chopped almonds on a baking sheet and place in the oven for 5 minutes or until just slightly golden. Remove them and allow to cool completely.

While the almonds are cooling, add 3/4 cup of the shredded coconut to a mini chopper and process until finely shredded.

In a medium saucepan over low heat, add in the chocolate chips, sweetened condensed milk, heavy cream, butter, sweetener, and ¾ cup of the shredded coconut.

Stirring constantly, melt the chocolate, butter and mascarpone cheese.

Once melted and well combined, remove from the heat and stir in the vanilla and coconut extracts.

Pour the mixture into a 8″ x 8″ glass dish that is lined with parchment paper (for easy removal).  

Pour the chopped almonds and remaining ¼ cup of the shredded coconut over the top and allow to chill in the fridge for at least 4 hours or overnight, until fully set.

Next, just cut the fudge into small squares, and it’s ready to serve!

☑️ Storage Instructions

Because this fudge is made with dairy products, I do not recommend leaving leftovers out at room temperature for longer than an hour or so. For best results, store leftovers in the fridge for up to several days.

💡 Tips for Making This Sugar Free Almond Joy Fudge Recipe

  • Don’t skimp on the chocolate. Since chocolate is one of the main ingredients, you’ll want to use a really good quality chocolate like the one I used.
  • This keto fudge recipe is prepared in an 8″ x 8″ dish, that yields perfectly sized pieces of fudge. But if you’re like a lot of people, you may not have a lot of different-size baking dishes, so if you need to use a 9″ x 9″ or even a loaf pan, you can. The pieces will be thicker, but equally delicious!
  • To harden the fudge, be sure you let it sit in the fridge for the full recommended time. If you’re needing it sooner than overnight, you can place it in the freezer for about an hour to get a jump start on the chilling process.
  • To get clean edges while cutting, use a sharp knife and be sure to clean it off after each slice.
  • Using parchment paper helps release the fudge from the pan. There’s no need to use any type of nonstick spray because it just adds too much extra oil to the edges of the fudge.

🔄 Substitutions and Additions

  • Sea salt: Sprinkle a small amount of sea salt on top before chilling for a sweet and salty contrast.
  • Chia seeds: Mix in a tablespoon of chia seeds for extra nutrition.
  • Pecans or walnuts: Replace or combine with almonds for different tastes and textures.  
  • Almond extract: Boost the almond flavor by adding a teaspoon of almond extract along with the vanilla.
  • Protein powder: For an extra protein kick, add 1/2 scoop of your favorite keto-friendly protein powder.

What’s the Best Way to Freeze Sugar Free Fudge?

Just place pre-cut pieces in plastic wrap or an airtight container then put them in the fridge for up to a couple of months. To thaw, take it out of the freezer, unwrap it immediately, and then place it in the fridge until thawed.

What If I Can’t Find Mascarpone Cheese?

Mascarpone cheese adds a unique creamy texture, but you can substitute it with softened cream cheese if needed. Keep in mind that the flavor and consistency may vary slightly.

What Can I Do if My Chocolate Mixture Separates?

If the mixture separates, it may have been heated too quickly or at too high a temperature. Remove it from the heat immediately and whisk vigorously to bring it back together.

Can I Use a Different Sweetener?

I really love the way the monk fruit and allulose blend taste in this fudge recipe. But you can substitute with your preferred keto-friendly sweetener. However, different sweeteners have varying sweetness levels, so adjust the quantity to taste.

    1. It’s actually not, but when I recently updated the recipe it must have gotten missed somehow. Sorry for the confusion, I’ve corrected the recipe.

  1. Does the coconut get sprinkled on top with the almonds? As far as I can tell, the recipe doesn’t say when to add it.

  2. Could not tell when to put in the shredded coconut. Not sure if I misread to add the extracts until everything was melted and add almond on top. Missed when to put the shredded coconut in. So it ended on top with the almonds. So letting it set for now not sure about the taste just yet.

    1. Sure, full fat cream cheese would work best. It will change the flavor slightly, but will still taste great! I hope that helps 🙂

    This was amazing. I had it saved off to the side of things, because it was a little time consuming (I made the sweetened condensed milk right before). So, I had the time, and off I went… I followed the recipe to “T” and seriously, everyone, from the 13 year old, to me (the 52 year old) have dubbed this a hit. I let it cool a little bit before adding coconut and toasted almonds to the top, so they didn’t sink in, and I ended up with a beautiful soft fudge, with this amazing topping. As a side note, I know this isn’t the sweetened condensed recipe- but wow.. THAT in and of itself is amazing. Kudos to you! I’ve been keto-ing for a long time.. and I have to say, this is by far a favorite 🙂 Thank you!
