But, with just a few simple ingredients, it's a quick dish that is on the table in less than 30 minutes. This is the perfect recipe for those that love their chicken with an extra punch of flavor.

    The bright and bold sauce, made with fresh herbs, garlic, vinegar, and olive oil, is the star of this recipe. It not only adds the most unique and amazing flavor to the chicken but also makes a gorgeous presentation drizzled over the top golden brown, pan-seared chicken.

    🔪 How to Make Chimichurri Chicken

    Prepare your batch of Chimichurri Sauce and leave at room temperature, while you prepare the chicken.

    Tip: You can make a double batch to have extra on hand to serve over steak, fish, shrimp and even grilled veggies!

    Sprinkle the salt, pepper and smoked paprika on both sides of each chicken breast.

    Take about ¼ of the chimichurri sauce and brush it over both sides of the chicken to act as a marinade.

    Allow the chicken to marinate for 20 minutes at room temperature.

    Tip: You can marinate it up to 1 hour, but I wouldn't recommend much past that or the acids in the sauce will start to cook the chicken.

    In a large skillet over medium heat, add in the olive oil and once heated, add in the chicken.

    Cook for 5-7 minutes on each side or until the internal temperature reaches at least 165°F when checked with a meat thermometer.

    Tip: Alternatively, you can grill or roast the chicken if you’d like.

    Top each piece with a generous serving of the chimichurri sauce and add the rest to a small bowl on the side for easy dipping.

    Store leftovers in an airtight container in the fridge for 2-3 days.

    What is Chicken Chimichurri?

    The chicken portion of this recipe is just that…chicken. But the real question is what exactly is chimichurri sauce?

    Chimichurri is a vibrant, herby, uncooked oil-based sauce with a tangy, zingy, garlicky flavor. It originated in Argentina and Uruguay, but it’s prepared similarly to this Easy Pesto but has a punchier flavor profile.

    Is Chimichurri OK on Keto?

    Chimichurri sauce is made of herbs, spices, olive oil, and vinegar. It’s a delicious condiment for meats and veggies, salads, or as a dip. Because it’s low in carbs and high in healthy fats, it’s the perfect sauce for Keto.

    What Goes with Chicken Chimichurri?

    If you're looking for a Keto side dish to serve with your healthy chicken chimichurri, here are a few great options:

    Can I Use Chicken Thighs Instead?

    Of course! This recipe is easily adapted if you prefer chicken thighs over breasts. For best results, use a kitchen mallet to flatten the thighs so that they are an even thickness. This ensures they cook evenly. Keep in mind, that dark meat may require a little extra cooking time.

    Can I Make This Recipe in Advance?

    The chimichurri sauce can be prepared several days in advance and stored in the refrigerator until ready to use.

    You can also marinate the chicken in the chimichurri sauce, anywhere from 20 minutes to overnight, in an airtight container, in the refrigerator.

    You can freeze it with the marinade as well. Just add the chicken with the sauce to a freezer bag and flatten it out, getting out all the extra air. Place it in the freezer for up to 2 months. Thaw in the fridge overnight before cooking.

    • 4 chicken breasts

    Recipe Notes

    Alternatively you can grill the chicken instead of sautéing it.  As the chicken is marinating you can heat up your grill and once cooked through, top with the sauce and serve.
