☑️ Storage Instructions

If you have leftovers, the best way to store then is to store the ingredients separately in airtight containers for up to 2 days. I do not recommended freezing leftovers because the avocado and fresh veggies do not hold up well.

💡 Tips

  • Always pat your shrimp dry before cooking so they sear instead of steaming.
  • Use raw shrimp for the best texture instead of pre-cooked.
  • Slice the onion thin so it adds crunch without overwhelming the other ingredients.
  • Let the chimichurri rest for at least 10 minutes before serving so the flavors meld.

🔄 Substitutions and Additions

  • Veggies: Add grilled zucchini or bell peppers for extra color and nutrients.
  • Yogurt: Swap sour cream with full-fat Greek yogurt if you prefer a tangier topping.
  • Olives: Toss in olives for a briny bite that pairs well with chimichurri.
  • Cheese: Add shredded cheese like Monterey Jack, mozzarella, or queso fresco for more richness.
  • Bacon: Top with crisp bacon crumbles for a smoky twist.
  • Greens: Layer in spinach or arugula under the cauliflower rice for extra greens.
