🔪 How to Make Citrus Glazed Salmon

Add the zest and juice of the lemon, orange and limes to a small mixing bowl.

Add in the rosemary, salt, pepper, olive oil, garlic and sugar-free honey, then whisk to combine.

Place the salmon in a container, then pour the citrus marinade over the tops of the salmon, making sure all sides are coated.

Allow the salmon to marinate in the fridge for 1 hour.

Tip: I wouldn’t recommend marinating any longer because the acid in the citrus marinade will start to cook the salmon.

Take the salmon out of the fridge and allow to come to room temperature while you preheat your oven to 425°F.

Pour the marinade into a small saucepan and simmer for 10 minutes to make a glaze.

Tip: Simmering the marinade achieves 2 things: it makes a wonderful thick and flavorful glaze and also makes it safe to consume.

Transfer the salmon to a baking sheet with a wire rack, and line the baking sheet with aluminum foil for easier cleanup.

Bake the salmon for 10 minutes, then remove and brush the tops with the marinade glaze.

Turn on the broiler and broil for an additional 2-4 minutes or until they reach an internal temperature of 125°F-145°F when checked with an instant read thermometer, depending on your personal preference. 

Tip: I personally prefer my salmon closer to 125°F, though the FDA recommends 145°F.

How Long Can I Marinate the Salmon in Citrus Juice?

When marinating salmon in any type of citrus juice, it’s best to keep it to just one hour. Citrus juices contain acids that can start to break down the proteins in the fish if left for too long, which can result in a mushy texture.

Can I Use Any Type of Citrus Fruit for the Glaze?

This recipe uses three different types of fresh fruit juice- lemon, lime, and oranges. You can also use grapefruit or tangerines. If you prefer one type of juice over the other, feel free to adjust the amounts.

Can I Prepare the Glaze Ahead of Time?

Yes, you sure can. Making the glaze/marinade in advance can save you a few minutes in the kitchen and makes the cooking process even more convenient. After preparing the glaze, just transfer it to an airtight container and store it in the refrigerator for up to 3-4 days.

When you’re ready to marinate the fish, simply remove the mixture from the refrigerator and give it a good stir to ensure it’s well mixed.

Ingredients
 

  • 24 ounces salmon, cut into 6 pieces
  • zest and juice of 2 limes
  • zest and juice of 1 lemon
  • zest and juice of 1 orange
  • 3 cloves garlic, minced
  • 1/4 cup sugar-free Keto honey
  • 2 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

    1. Yes, you sure can, though it will be a lot more carbs of course. You can just use the same amount, so it’s a 1:1 sub.
