It all starts with fresh cut green beans tossed in a skillet with sautéed mushrooms, shallots and garlic. Then everything is drenched in melted butter and finished with a hint of red pepper flakes.

Take your average everyday green beans and turn them into something special with this recipe. It’s easy enough for busy weeknights, but special enough to serve with holiday meals.

- Green beans
- Mushrooms
- Shallots
- Vegetable broth
- Garlic
- Butter
- Olive oil
- Red pepper flakes

🔪 How to Make Green Beans and Mushrooms
Wash and trim your green beans, then heat a large pot to water over high heat. Once boiling, add in the green beans and boil for 7 minutes or until almost cooked through.

Add them to a bowl of ice water and set aside. This helps to set the pretty green color and stops them from overcooking.

Heat a large skillet to medium and add in the mushrooms, shallots and olive oil.

Sauté until they have some good color start to caramelize, then add in the garlic and continue sautéing for 30 seconds.

Pour in the vegetable broth to deglaze the pan and reduce by half.

Add in the butter and once melted, the green beans, salt, black pepper and red pepper flakes.

Toss to combine and continue cooking for another 2 minutes or until the green beans are tender and reach your desired texture and serve.

💡 Tips
- If you want to save some time, you can get your mushrooms, shallots and garlic prepared before you boil the green beans. Then sauté them while the green beans are boiling. If the green beans are finished by the time you’re to add them to the skillet, you can skip the ice water step.
- Save time by purchasing green beans that have already been washed and trimmed.
- If you’re in a hurry, you can save some time by preparing/slicing all the ingredients ahead of time, boil the green beans while you sauté the mushrooms and shallots.
- Don’t boil your green beans until they are completely cooked through, as they will continue cooking in the skillet. If you add them in fully cooked, they could become mushy and start to fall apart.

🔄 Substitutions and Additions
- If you can’t find shallots, you can use onions instead.
- To add an Asian flair, use shiitake mushrooms instead of the baby bellas and add in some liquid aminos and toasted sesame oil.
- If you don’t like spicy foods, you can omit the red pepper flakes.
- If you can’t find baby bella mushrooms, you can use just about any mushrooms that you like. Just make sure to allow them to start to caramelize so they have great flavor.
- If you can’t have butter, you can use olive oil instead.
