How to Make Keto Honey Glazed Ham
Preheat oven to 325°F, while you prepare the ham.
Remove the skin (if any) then, using a sharp knife cut about ¼ inch deep and score the fat in a diamond-shaped pattern. You only want to score the fat, not the flesh.
Place the ham, face down, in a 9x13 baking pan with a baking rack.
Cover tightly with aluminum foil and bake for 1 ½ hours.
Remove the ham from the oven and increase the temperature to 400°F.
Add all the remaining ingredients to a saucepan and bring to a gentile simmer, stirring the entire time.
Simmer for 5 minutes until the brown sweetener has dissolved and the mixture has thickened.
Brush ⅓ of the glaze all over the ham and continue to bake, uncovered, for 15 minutes.
Repeat the process once more until the outside has caramelized. Take the remaining ⅓ of the glaze and whisk in some of the ham juices to make a sauce, to pour over the sliced ham before serving.
Is Ham Keto Friendly?
If you are on Keto or a low carb diet, the holidays can be such a challenge when it comes to feeding a mixed crowd of dieters and non- dieters.
Even something as simple as baked Easter ham may bring into question, “Is ham low in carbs” or “How many carbs are in cooked ham?”
The good news is uncured ham in its natural state is perfectly fine on a Keto because it is basically a carb free protein. If you can't find uncured, you can use one cured in sugar, because most of the sugar is cooked out of it. Just be sure to read the label for any other unwanted additives.
The real problem with the carbs in ham comes in when it is prepared using brown sugar, maple syrup or other sugary glazes. But with this recipe, a sugar-free honey and brown sugar substitute sweetens up the glaze while the sugar free jam gives the glaze that classic sticky texture! And it is all Keto-approved!
The key to cooking a pre-baked ham is to cook it just long enough for it to reach 135°F on meat thermometer when it’s inserted near the center of the ham. This can take anywhere between 10-15 minutes per lbs., depending on how your oven bakes.
Then remove the ham and increase the oven temp to 400°F before adding the glaze. You’ll want to cook the ham until the glaze is burnished and glistening.
If an Easter or Christmas ham is going to be the main course for your celebration, you will need to plan on about ⅓ to ½ lb. of bone-in ham per person. If you're serving a boneless ham, you will need to plan on ¼ to ⅓ lb. per person.
