    This strawberry coconut mousse is the ultimate treat for those times when you’re craving something light and refreshing. With its creamy texture and sweet strawberry and coconut flavor, it’s like a delicious bowl of fruity goodness that you can enjoy without any guilt.

    The great thing about this mousse recipe is that it’s super easy to whip up, yet it makes a sweet, rich dessert, perfect for a decadent treat.  Chill it in the fridge, and when you’re ready to serve it, it’s ready to go with a sprinkle of shredded coconut on top.

    This mousse was inspired by my Strawberry Coconut Cream Bars.  I wanted the same wonderful flavors, but in a dessert that was quick and easy to prepare. The texture is similar to a no bake cheesecake and only takes 5 minutes to make. It could not be easier!

    🛒 Ingredients for Strawberry Coconut Mousse

    • Strawberries
    • Coconut cream
    • Mascarpone cheese
    • Unsweetened shredded coconut
    • Monk fruit/allulose
    • Vanilla extract

    🔪 How to Make Keto Strawberry Mousse

    Refrigerate a can of full fat unsweetened coconut milk over night so that the cream separates from the water and solidifies.  The cream at the top is what you want, should be thick and creamy.  Once the cream has separated, measure out ½ cup and discard the water.

    Add all of the ingredients into the bowl of a food processor and process until smooth and creamy.

    Scrape down the sides and continue mixing until well combined. Allow to set up in the fridge before serving.

    Serve with shredded coconut sprinkled over the top and garnish with a strawberry.

    ☑️ Storage Instructions

    To store your strawberry coconut mousse, keep it in an airtight container in the refrigerator. It will stay fresh for up to 3-4 days. Just give it a quick stir before serving, and you’re good to go!

    💡 Tips for Making Strawberry Coconut Mousse

    • For the best flavor, opt for ripe, fresh strawberries. If they’re in season, they’ll give your mousse a burst of natural sweetness.
    • Chill your mixing bowl and food processor blades for a few minutes before making the mousse. This helps keep everything cold and enhances the texture.
    • If you’re making a larger batch, blend the ingredients in smaller portions to ensure a smoother consistency throughout.
    • Depending on your preference and the sweetness of your strawberries, you can tweak the amount of sweetener. Start with less and add more if needed after blending.

    🔄 Substitutions and Additions

    • Mascarpone cheese: Substitute with cream cheese or Greek yogurt for a different creamy texture.

    Can I Make This Recipe in Advance?

    Yes, you can prepare the mousse a day or two in advance. Just keep it covered in the refrigerator until you're ready to serve.

    Can I Use Frozen Strawberries Instead of Fresh?

    Yes, you can use frozen strawberries. Just thaw them and drain any excess liquid before blending to avoid a watery texture.

    Are There Carbs in Mascarpone Cheese?

    Mascarpone cheese is a low carb creamy Italian cheese. It is similar to cream cheese but has a milder flavor. It also has more fat but less carbs than cream cheese.

    There is only 1 net carb per 2 ounce serving of Mascarpone cheese. It's truly the perfect Keto cheese choice.

    Are Strawberries Keto?

    There are 9 net carbs in strawberries. They have a low glycemic index making them an acceptable option for recipes or even a snack on Keto and low carb diets.

    Ingredients
     

    • 1 cup diced strawberries
    • 1 cup full fat unsweetened coconut cream, see below
    • 1 cup mascarpone cheese
    • ½ cup unsweetened shredded coconut
    • 2 tablespoons monk fruit/allulose, powdered
    • ½ teaspoon vanilla extract

      Can you use ricotta instead of mascarpone?

        I have not tried using ricotta in this mousse recipe. I would imagine it would be a little too heavy, but you can certainly try.
