    🛒 Ingredients for Air Fryer Chicken Bites

    • Chicken breast: Cut into bite-size pieces so it cooks quickly and stays tender.
    • Bell pepper: Use a mix of red, yellow, and orange for a colorful, sweet contrast.
    • Zucchini: Mild and tender with just enough bite to balance out the texture.
    • Red onion: Adds a little sharpness and depth once it cooks down.
    • Feta cheese: Salty and creamy, it’s the perfect finishing touch.
    • Kalamata olives: Briny and rich, they give this dish that true Greek-inspired taste.
    • Garlic: Grated for the best flavor in the marinade.
    • Olive oil: Helps the marinade coat everything and adds richness.
    • Red wine vinegar: Gives it a tangy punch that cuts through the richness.
    • Lemon juice: Fresh, bright, and balances the savory ingredients.

    🔪 How to Make Greek Chicken Bites in the Air Fryer

    Add the olive oil, red wine vinegar, lemon juice, grated garlic, dried oregano, salt and ground black pepper into a salad dressing shaker cup and shake until well combined.

    Dice up your chicken into small bite sized pieces, then add to a food storage bag.

    Pour the marinade over the chicken, seal up the bag and marinate in the fridge for 1 hour.

    Preheat your air fryer to 400°F.

    Add the zucchini, bell pepper and red onion to a large mixing bowl.

    Pour the chicken and any residual marinade over the top.

    Toss to combine, then pour into the basket of your air fryer.  Depending on the size of your basket, you might have to make them in 2 separate batches.

    Air fry @ 400°F for 13-15 minutes or until the chicken reaches an internal temperature of at least 165°F, when checked with a meat thermometer.

    Crumble the feta cheese over the top and add in the Kalamata olives and top with fresh chopped mint, then serve.

    ☑️ Storage Instructions

    • Fridge: Store leftovers in an airtight container for up to 4 days.
    • Freezer: You can freeze the cooked chicken and veggies for up to 2 months.
    • Reheat: Thaw overnight in the fridge before reheating in the air fryer or a skillet.

    Ingredients
     

    • 1 ½ pounds chicken breast, cut into bite size pieces
    • 2 bell pepper, mix of colors, cut into bite size pieces
    • 1 medium zucchini, halved
    • ½ cup red onion, chopped
    • ¼ cup feta cheese, crumbled
    • ¼ cup Kalamata olives
    • 2 cloves garlic, grated
    • ¼ cup olive oil
    • 2 tablespoons red wine vinegar
    • 2 tablespoons lemon juice
    • 1 tablespoon fresh mint, chopped
    • 1 teaspoon dried oregano
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper

    Instructions
