Add the olive oil, red wine vinegar, lemon juice, grated garlic, dried oregano, salt and ground black pepper into a salad dressing shaker cup and shake until well combined.

Pour the marinade over the chicken, seal up the bag and marinate in the fridge for 1 hour.
Preheat your air fryer to 400°F.
Add the zucchini, bell pepper and red onion to a large mixing bowl.

- ¼ cup feta cheese, crumbled
- ¼ cup Kalamata olives

- 2 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon fresh mint, chopped
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
