If you’re looking for an easy low carb protein to make on a busy weeknight, look no further! These baked chicken thighs take just a few minutes of prep work, 3 ingredients total and dinner is on the table in about 30 minutes!
So you can prepare the chicken, throw it in the oven and get a few other things done while you chicken cooks up. It really doesn’t get much easier than that! Pair with your favorite side dish and you are all set with an easy Keto chicken dinner that everyone will love!
What I love about chicken thighs is they are nice and tender, juicy and have plenty of healthy fats, making them ideal for Keto. The seasoning I used in this recipe is my Homemade Ranch Seasoning (you can use store bought if you want), but it’s great to have some on hand to make other recipes with it like my Keto Ranch Crackers, Baked Ranch Chicken Wings, Crockpot Ranch Chicken, Cheddar Ranch Biscuits or Ranch Roasted Cauliflower, just to name a few.

- Homemade Ranch Seasoning

🔪 How to Make Baked Chicken Thighs
Preheat oven to 400°F.
Trim any excess fat or skin off of your chicken, then dry all sides using paper towels.
Rub the olive oil all over each piece of chicken, then sprinkle the ranch seasoning on the top and bottom, making sure all sides are well covered.
Place the chicken in a casserole baking dish that’s been brushed or sprayed with olive oil.
Bake for 30-40 minutes or until the internal temperature reaches at least 165°F when checked with a meat thermometer.
Tip: Cooking times will depend on the size of your chicken thighs. Smaller pieces could be ready close to 30 minutes, while larger ones at about the 40 minute mark. This is why it’s important to use a meat thermometer, this way there is no guesswork and your chicken will be cooked perfectly.
Allow the chicken to rest for a few minutes before cutting into and serving.
💡 Tips
- Be sure to dry all sides of the chicken well, otherwise the skins will not crisp up nicely.
- Don’t use too much olive oil, you want just enough to coat it.
- If you are using store bought ranch seasoning, use a little less, as it tends to be on the saltier side.
- Space the chicken apart so that all sides cook evenly and crisp up, rather than steam.
- Be sure to let your chicken rest for at least 5-10 minutes. This allows the juices to redistribute and keep the chicken juicy. If you cut into them too soon, the juices will run all over the plate.

🔄 Substitutions and Additions
- If you don’t have the ingredients to make your own Ranch Seasoning, you can use store bought. Just be sure to use only 1 tablespoon, since it has ingredients that make it on the saltier side.
- To add a little heat, you can add a pinch of red pepper flakes.
- For a tangy lemon flavor, you can add a little lemon zest over the tops.
- For a bolder ranch flavor, remove the chicken about 5 minutes before it’s finished cooking. Brush some melted butter over the tops and sprinkle a little extra ranch seasoning, then continue baking until they are done. I do this with my Baked Ranch Chicken Wings and it gives a nice bold ranch crust on the skins.
Is it better to bake chicken thighs at 350 or 400?
To get the nice crispy skins, I prefer baking them at 400°F. If you bake them at 350°on the other hand, the skins will take longer to crisp up and you may run the risk of overcooking the chicken.
What temperature is best for chicken thighs and legs?
As I mentioned above, 400°F is the sweet spot for this recipe. But the temperature can of course vary by the recipes.
Is chicken breast or thigh better for keto?
Honestly, either is perfectly fine for a Keto or low carb diet. Some will lean more on the side of the chicken thighs because they do contain more healthy fats. You can use other ingredients to hit your macros though, like olive oil or butter.
What kind of chicken can I eat on keto?
The great thing about a Keto diet is all cuts of chicken are suitable! So whether it be chicken thighs, like in this recipe, breasts or wings, they are all a healthy source of protein that we can enjoy.
