Slice each chicken breast in half, making 6 pieces in total. Using a meat tenderizer, slightly flatten them out, making sure they are level and even. Sprinkle both sides with the garlic salt, pepper, dried basil and dried oregano.
Heat a large oven-safe skillet to medium. Add in the olive oil and the chicken.
Sauté for a few minutes on both sides until they are cooked through.
Add the mozzarella cheese over the top of each piece of chicken.
Place the skillet under the broiler for 5-7 minutes or until the cheese has melted, then remove from the oven.
Add slices of the tomatoes over the top, with fresh basil leaves alternating between each slice.
Top with a drizzle of the (optional) balsamic reduction. I also like to add some flaked sea salt, oregano and ground black pepper over the top right before serving.
