    Cranberry sauce is a quintessential staple on the traditional Thanksgiving table.  It’s easy to make, perfectly tart and sweet, and compliments the turkey, whether you roast it in the oven, in the air fryer or slow cooker. 

    As with many holiday feasts, we often have leftovers and by the second or third day, we’re ready for a change.  That’s where using up your leftovers in creative ways comes in handy and this leftover cranberry sauce recipe does just that!

    Put that leftover cranberry sauce to good use with this cranberry fluff.  Cream cheese and homemade whip cream and are whipped until light and airy, giving this Keto dessert a nice mousse-like texture.  It takes just a few minutes to make using a handful of ingredients.

    This sugar-free cranberry dessert is also great to serve your party guests.  Layered with my Homemade Keto Cranberry Sauce and topped with a fresh cranberry, your guests will devour them, whether they are on a low carb diet or not!

    🛒 Ingredients for Cranberry Mousse

    • Cream cheese
    • Heavy cream
    • Homemade Keto Cranberry Sauce
    • Monk fruit/allulose
    • Salt
    • optional: toasted almonds

    • Mixing bowl
    • Hand mixer

    🔪 How to Make Keto Cranberry Fluff

    Add the heavy cream to a cold mixing bowl and whip using a hand mixer, until you get stiff peaks.  Chill in the fridge while you prepare the rest of the ingredients.

    In a separate bowl, add in the cream cheese and whip up.

    Add in the cranberry sauce and sweetener.

    Continue mixing, until well combined.

    Fold in the whipped cream in 3 additions.  Chill in the fridge for at least 1 hour before serving.

    Spoon into serving glasses and top with the (optional) toasted slivered almonds) and serve.

    💡 Tips for Making the Best Cranberry Fluff

    • Be sure to use full fat cream cheese, low fat versions will not give you the same level of creaminess that you’re looking for.
    • You also want to make sure you use cream cheese that is a little softened, so that it blends properly with the other ingredients.
    • Make sure your heavy cream and the bowl you whip it in are cold.  This will allow the cream to whip up thicker and retain that texture. I always place my mixing bowl in the freezer a few minutes before whipping, and believe me it helps!
    • Carefully fold the whipped cream into the cream cheese and cranberry mixture. While you might be tempted to just mix it in with the hand mixer or all at once, you will lose some of the air that you incorporated into the whipped cream.  I recommend folding it in 3-4 additions.  This will give you a really nice fluffy texture.  It takes a few minutes, but is well worth it.

    ☑️ Storage Instructions

    Store leftover cranberry fluff in an airtight container for 3-4 days.

    🔄 Substitutions and Additions

    • If you don’t have cream cheese, you can use mascarpone cheese instead.  It has the same texture as cream cheese, with a milder flavor and fewer carbs.
    • This dessert can also be made with leftover Keto Blueberry Sauce, Raspberry Sauce or Strawberry Sauce.  You could even use Lemon Curd! Follow the same instructions and you can easily change up the flavors according to what you happen to have on hand.
    • Add in some vanilla extract or vanilla bean paste to add great flavor.
    • If you don’t have almonds on hand, you can use walnuts or pecans instead.  Just be sure to toast them first, as this gives the nuts more flavor.  Topping the fluff with nuts helps give a really nice contrast in texture.
    • If you have sugar-free mini marshmallows, you can also fold those into the fluff along with the whipped cream.
    • You can also serve this cranberry fluff layered in a glass, which is perfect for parties.  I use small shot glasses and layer with the fluff and cranberry sauce, with a single fresh cranberry on top as a garnish.

    Are Cranberries Ok for Keto?

    Yes, they sure are!  Cranberries are low in carbs and when prepared with a Keto friendly sweetener, they can be enjoyed on a Keto diet.

    Can You Eat Cranberries Right Out of the Bag?

    While it’s certainly safe to eat them either cooked or raw, they are not very palatable when they’re raw.

    How Long Does a Bag of Cranberries Last?

    If stored in the crisper drawer of your fridge, a bag of fresh cranberries can actually last a few weeks.

    Can You Freeze Whole Fresh Cranberries?

    Yes, you can also freeze them for up to 1-1 ½ years if stored in the freezer properly.

    Will Cranberry Sauce Thicken Without Sugar?

    Yes!  Cranberries naturally contain pectin which helps act as a thickener, but my cranberry sauce recipe also uses lemon juice which does the same.  My sugar-free cranberry sauce is the perfect consistency and you would honestly never know the difference!
