This low carb blueberry sauce is very similar to my raspberry sauce and it thickens up beautifully, without having to use any special ingredients. You can leave it chunky or puree it in your food processor for a smoother sauce.
With just a handful of ingredients, you can make this easy Keto blueberry sauce recipe in just 10 minutes. It also freezes and thaws perfectly, so you can freeze your leftovers to have on hand anytime you want!

How to Make Keto Blueberry Sauce
Add the blueberries, Swerve, lemon juice and water to a saucepan, then mix until well combined.
Simmer over medium/low heat for 8-10 minutes, stirring often.
You'll see the berries start to break down and the sauce will thicken as it continues to cook.
Allow to cool before serving.
If you prefer a smooth sauce, you can blend it in a food processor, until you get your desired consistency.
Serve over ice cream, Chaffles, waffles, pancakes or cheesecake.
Tips for Making the Best Keto Blueberry Sauce
Using fresh blueberries is certainly best, but if you can only find them frozen, by all means use them. Just be sure to thaw them first, and you can add them into the pan, juice and all.
This is actually how I make Raspberry Sauce and it works really well!
How to Thicken Blueberry Sauce Naturally
As I mentioned earlier, one of the best things about this sauce besides the amazing flavor, is that you don't need to use any special ingredients to thicken it up.
I try to only using thickeners like Xanthan Gum when I really have to. The acidity in the lemon juice acts as a natural thickener, but it also brightens up the flavor a bit.
This recipe uses Swerve Confectioners and works really well because it doesn't crystalize as the sauce cools. Alternatively, you can use powdered allulose or powdered monk fruit/erythritol blend instead.
Use as a Keto Blueberry Topping
If you'd like it to be a little chunkier and use it as a low carb blueberry topping for pancakes or waffles, you can leave the sauce as is and it will be thick enough, and still give you those nice chunks.
You can also use this sauce to make Blueberry Crepes or as a blueberry sauce for Keto cheesecake. You can spread some over drop biscuits for an afternoon treat with a hot cup of tea.
If you'd like it to be smooth, you can either use an immersion blender or puree in your Food Processor, until you get the consistency you're looking for.
How to Make a Basic Chaffle
I use the Dash mini waffle maker to make my Chaffles and it works so well, plus you can't beat the price! All you do is plug it in, and once it heats up, spray both waffle plates with nonstick spray or brush with coconut oil, then mix together 1 whole egg and ½ cup of shredded cheese (I prefer using mozzarella because it's mild in flavor).
Then pour ½ of the mixture on the bottom plate and close the lid. Now depending on how firm or crispy you like them, you'll want to cook them anywhere from 3-6 minutes each.
Cook the second one and top with the blueberry topping and you're good to go! I also use this basic Chaffle recipe as a low carb bread replacement for sandwiches or BLT's and it works so well.
