- Ground beef

🔪 How to Make Keto Meatloaf in the Slow Cooker
Heat a skillet to medium and add in the olive oil, onions, ground black pepper and half the salt. Sauté for a few minutes until slightly caramelized.
Add in the garlic and sauté for another 15 seconds, then remove from the heat and allow to cool, while you mix up the meatloaf.
Tip: If you're in a hurry, you can chop the onions smaller and skip sautéing them. But because this gives it a lot more flavor, I highly recommend taking the time to do it.
In a large mixing bowl, add in the eggs, parmesan cheese, almond flour, BBQ sauce, tomato paste, parsley, dried thyme, Worcestershire sauce and remaining salt.
Once the sautéed onions and garlic have cooled, add them in and mix until well combined.
Add in the ground beef and mix, just until combined.
Tip: Do not over mix or the meatloaf could become tough.
Add a couple of sheets of aluminum foil to line the insert of your slow cooker. Spray the bottom and sides with nonstick spray or brush with olive oil. Form ground beef mixture into a meatloaf shape and place it in your foil-lined insert.
Tip: The aluminum foil will help make removing it easier and cleanup a snap!
Cook on high 2 ½- 3 hours or low for 5-6 hours or until the internal temperature reaches 160°F when checked with a meat thermometer.
Tip: Cooking times can vary based on how you shape your loaf. A longer thinner loaf will cook slightly faster than a smaller, more compact loaf.
Preheat oven to 450°F. Carefully remove the meatloaf in the foil from the slow cooker insert, remove any excess fat and place in a baking pan with the foil.
Add the ketchup and brown sweetener in a small bowl and mix until well combined. Spread the mixture over the top and sides, then bake in the oven for 10-15 minutes or until the glaze is slightly caramelized.
Remove from the oven, slice and serve.
How Long Does Meatloaf Keep in the Fridge?
Meatloaf can typically be stored in the refrigerator for 3 to 4 days. It's important to properly store it in an airtight container to prevent it from picking up odors from other foods in the fridge.
Can I Freeze this Keto-friendly Meatloaf?
You sure can. It's a convenient option for meal prepping or making ahead. After baking, allow the meatloaf to cool completely, then wrap it tightly in plastic wrap or a freezer-safe container. It can be stored in the freezer for up to 2-3 months. Thaw it in the refrigerator before reheating.
Does Meat Loaf Have Carbs? Is Meatloaf Keto?
The carb content in a meatloaf recipe can vary depending on the specific recipe and ingredients used. Traditional meatloaf recipes usually include breadcrumbs, crackers, or other carb-filled binders, which can significantly increase unwanted carbs.
By substituting those types of fillers with healthy fillers, such as almond flour and sauteed onions, you're able to get the same juicy and moist meatloaf with fewer carbs.
Keto Meatloaf Recipe Variations and Add-ins
- Fresh spinach leaves: Add a handful of finely chopped spinach to the low carb meatloaf mixture. It adds extra nutrients and a nice pop of green color.
- Mushrooms: Sautéed mushrooms add a delicious earthy flavor plus extra moisture to the meatloaf.
- Bell peppers: Include some diced bell peppers, either yellow or green, or a combination to this easy Keto meatloaf for a pop of color and subtle sweetness.
- Jalapeños: For a spicy kick, add a finely chop jalapeño. If you want to make it a little less spicy, removed the seeds and pepper membrane before adding it.
- Cheese: You can add so many different types of cheeses to this recipe to give it little pockets of cheesy goodness all throughout. Cheddar, mozzarella, and provolone are some of my favorite melty cheeses.
- Mustard: Add about a tablespoon of Dijon mustard or even plain yellow mustard to the meat mixture or the topping for a little bit of a punch of flavor.
- Sun-dried tomatoes: Mixing in chopped sun-dried tomatoes not only adds little bites of chewiness, but it also adds natural sweetness.
- Keto BBQ meatloaf: You can give this meatloaf a wonderful BBQ flavor by using this homemade BBQ Sauce instead of the ketchup.
Can You Make Keto Meatloaf without Almond Flour or Pork Rinds?
This Keto meatloaf recipe does not use pork rinds, but it does use an almond flour and parmesan cheese mixture. That helps to bind the ingredients giving the meatloaf a tender texture and slightly nutty flavor.
Without any type of flour or breadcrumbs the meatloaf can become too dense and dry out while cooking.
Can You Have Panko on Keto?
Panko is just a type of breadcrumb made from white bread without crust, so it is not ideal for those on Keto.
What Slow Cooker is Best to Use?
I used the Hamilton Beach 6 Quart Slow Cooker and absolutely love it. It's very lightweight and is programmable. But here's my favorite part... you can use the insert on your stovetop to sear before slow cooking.
So if you have a roast that you want to sear to give it more flavor, you don't have to use another pan! You can also deglaze the pan with your liquids and really make the most of all that flavor. Hands down, my favorite slow cooker ever!
