🔪 How to Make Tajin Chicken
Cut each chicken breast in half, giving you 8 thin chicken cutlets.
Add them to a food storage bag and set aside.
In a small mixing bowl, add in the fresh lime juice, olive oil, grated garlic, Tajin, lime zest and salt.
Whisk to combine.
Then pour over the chicken.
Seal up the bag and massage all over the chicken, making sure all sides are well coated in the marinade. Chill in the fridge for 1-2 hours.
Preheat your outdoor grill. Alternatively, you can use stovetop grill pan instead.
Grill the chicken for several minutes on each side, or until they reach an internal temperature of at least 165°F, when checked with a meat thermometer.
Top with the (optional) fresh cilantro and serve.
☑️ Storage Instructions
- Fridge: Store leftovers in an airtight container for up to 3-4 days.
- Freezer: You can also freeze this grilled chicken for up to 2 months. Thaw overnight in the fridge.
🍴 What to Serve with Tajin Chicken
You can serve this chicken over a fresh garden salad or over a bed of Lime Cilantro Cauliflower Rice or this Coconut Lime Cauliflower Rice. You can also serve it with just about any easy side dish like these one of these:
- Shredded Brussels Sprouts
- Creamed Spinach
- Grilled Broccolini
- Green Beans Almondine
- Cheesy Mashed Cauliflower
💡 Tips
- Pound thicker parts of the chicken to even out the cutlets for even grilling.
- Use fresh lime juice, not bottled, for the best flavor.
- Marinate for at least an hour but no longer than four to keep the chicken tender.
- Let the chicken rest for 5 minutes before slicing so the juices stay in.
- A meat thermometer is your best friend here; you’re looking for 165°F.
- Clean and oil your grill grates before cooking to prevent sticking.
🔄 Substitutions and Additions
Chicken: Swap chicken breasts for boneless thighs for a slightly richer result.
Paprika: Add a pinch of smoked paprika to the marinade for extra depth.
Honey: Stir in a tablespoon of sugar-free honey if you like a touch of sweetness.
Garnishes: Garnish with chopped scallions or red onion for crunch and color.
Topping: Serve with a drizzle of crema or Greek yogurt mixed with lime.
Can I Freeze This in the Marinade to Prep Ahead?
Yes, mix everything together and freeze it right away. Thaw in the fridge before grilling.
How Can I Tell When the Chicken is Ready to Flip?
It should lift easily from the grill. If it’s sticking, give it another minute before turning.
Is Tajin Spicy?
Tajin has very mild heat. It’s more tangy and salty than hot, so most people do not find it spicy at all when mixed with other ingredients in a marinade.
Is This Recipe Good for Meal Prep?
Absolutely. Grill, slice, and store for salads, bowls, or wraps for the next few days.
What if I Want to Cook it Indoors Without a Grill?
A cast iron skillet works well. Just avoid crowding the pan so you still get a good sear.
