If you like lemon desserts, you’re going to love this mug cake! If you ever get cravings, especially late at night when you’re too tired to make a whole dessert, this lemon cake can be made in under 5 minutes.
You only need a handful of ingredients that you might already have on hand, then just mix up the batter and microwave it for 1 minute and DONE! Serve with some whip cream on top and you’re ready to enjoy.

🛒 Ingredients for Lemon Mug Cake
- Super fine almond flour
- Monk fruit/allulose
- Butter
- Lemon
- Egg
- Oat Fiber
- Baking powder
- Salt

🔪 How to Make Gluten-Free Lemon Mug Cake
In a small mixing bowl, add in the almond flour, oat fiber, baking powder and salt. Whisk to combine, then set aside.

In a separate bowl, add in the butter, lemon juice, lemon zest, egg and sweetener. Whisk to combine.

Pour the wet ingredients into the dry and mix just until combined.

Pour half the batter into 2 small ramekins or mugs that have been sprayed with coconut oil.

Microwave for 50-60 seconds or until cooked through.

Allow to come to room temperature and once cooled, it’s ready to serve.

Top with the (optional) whip cream and enjoy!

Store leftovers in an airtight container in the fridge for up to 3 days.

💡 Tips
- Using room temperature ingredients will result in a smoother batter.
- Don’t over mix the batter, otherwise the cake could end up being dense and tough, rather than light and fluffy.
- If your microwave cooks on the faster side, try cooking the cakes for 50 seconds first, then check the consistency. You can always cook for another 10-15 seconds if you need to.
- Don’t use bottled lemon juice! Fresh lemon juice works best for this recipe, plus you need the lemon zest to really drive home that fresh lemon flavor.
- Make sure to use powdered sweetener, otherwise the cake could have a slightly gritty texture. If you only have granulated sweetener on hand, no problem, just pulse it a few times in a coffee grinder or food processor to powder it.

🔄 Substitutions and Additions
- Whip Cream: Add some fresh homemade whip cream or coconut cream over the top.
- Extract: Add in a little vanilla or coconut extract for added flavor.
- Curd: For an extra punch of lemon flavor, add some lemon curd on top.
- Ice Cream: Serve with a scoop of vanilla or coconut ice cream on top.
- Key Lime: For a twist of lime, reminiscent of a key lime pie, replace the lemon juice and zest with lime.
- Blueberries: Add in some fresh blueberries for a sweet addition.

Is Lemon Mug Cake Keto?
Traditional mug cakes are not Keto, as they contain regular flour and sugar, making it very high in carbs. This lemon mug cake is keto friendly, since it’s made with almond flour and a keto friendly sweetener.
Does Lemon Affect Ketosis?
Lemons are low enough in carbs that they should not kick you out of ketosis, especially given the small amount used in this keto lemon cake recipe.
Should You Avoid Lemons On The Keto Diet?
There’s absolutely no reason to avoid them on Keto, as they are low in carbs. I actually use them in a LOT of keto recipes, because they add such great flavor to anything you add them to. Especially given, each recipe only uses a small amount that hardly has any impact on the carb count.
