Add all of the ingredients to a large mixing bowl.
Using a hand mixer, mix until well combined.
If you don’t have a hand mixer, you can certainly mix it by hand instead.
Serve in a bowl with fresh veggies and crackers for dipping or over your favorite low carb bread.

Fridge: Store leftover in an airtight container up to 5 days. Just give it a good stir before serving again.
Freezer: Not recommended because the texture changes once thawed.

Ingredients
- 1 1/2 cups cheddar cheese, finely grated
- 1/2 cup pepper jack cheese, finely grated
- 8 ounces cream cheese, room temperature
- 4 ounces pimento peppers, chopped, brine reserved
- 1/3 cup mayonnaise
- 1 clove garlic, grated
- 1 tablespoon pimento pepper brine
- 1/2 teaspoon onion powder
- 1/2 teaspoon hot sauce
- 1/2 teaspoon salt
