☑️ Storage Instructions

Fridge: Store leftover in an airtight container up to 5 days. Just give it a good stir before serving again.

Freezer: Not recommended because the texture changes once thawed.

🍴 What to Serve with Pimento Cheese Dip

One favorite way to serve this dip is on a Charcuterie Board, but here are some great low carb choices for dipping:

  • Sandwiches: A classic choice for pimento cheese is a sandwich. Keep it low carb by make them with this Homemade Bread.
  • Veggies: This dip is amazing with red bell peppers, cucumbers, carrots, broccoli, snap peas, broccoli, and cauliflower florets.

💡 Tips

  • Grate the cheese yourself for the creamiest texture. Pre-shredded tends to be drier.
  • Let the cream cheese soften fully before mixing so everything blends smoothly.
  • Add the pimento brine gradually and taste as you go to adjust tanginess.
  • You can mix in a spoonful of Greek yogurt in for a more tangy flavor.
  • Chill the spread for at least 30 minutes before serving for the best texture.

🔄 Substitutions and Additions

  • Cheese: Swap pepper jack for Monterey Jack if you want mild flavor with no spice.
  • Paprika: Add a pinch of smoked paprika for a deeper, smoky note.
  • Peppers: Stir in finely chopped jalapeños if you like a little heat.
  • Bacon: Mix in cooked, crumbled bacon for a heartier spread.
  • Onions: Fold in chopped green onions for a fresh, crisp bite.

Can I Make This Ahead of Time?

Yes, it tastes even better the next day once the flavors meld together.

Why is My Pimento Cheese Runny?

Too much brine can cause this. Add more shredded cheese to thicken.

Can I use Roasted Red Peppers Instead of Pimentos?

Yes, just blot them dry first so the spread doesn’t become watery.

Can I Use a Food Processor Instead of Mixing by Hand?

You can, but you will want to pulse gently. Over-processing can turn it into a paste instead of a spread.
