🔪 How to Make Shaved Brussels Sprouts Salad
Add all the dressing ingredients into the bowl of a mini chopper, immersion blender or food processor.

Blend until well combined and emulsified, then set aside while you assemble the salad.
Tip: If you don’t have a mini chopper, you can mix it in a bowl with a whisk. Add everything to the bowl and stream in the olive oil slowly, while whisking the whole time.

Wash, dry and remove the outer leaves of your Brussels sprouts. Then shave them as thin as you can get them. The best way to achieve this is using a mandolin slicer.
Tip: If you don’t have a mandolin, you can use a sharp knife or food processor with the slicing blade. I cannot stress enough that you want them shaved, not just shredded.

Add the Brussels sprouts to a large bowl.

Add in the red cabbage, walnuts, feta cheese and blueberries.

Pour the dressing over the top and toss to combine. Allow the salad to sit for at least 20 minutes before serving.

💡 Tips for Buying Fresh Brussels Sprouts
- Look for the sprouts that have bright green leaves without any browning or yellowing.
- Check to make sure the leaves are tight and snug against one another.
- Keep in mind, smaller sprouts are sweeter than larger ones.
- Once you get them home, if you’re not going to cook them within two days, remove them from their package and transfer them to a Ziplock that you leave slightly open. This prevents moisture from building up.

🔄 Substitutions and Variations to Consider
Blueberries: Blueberries are the perfect summer berry that adds a fresh pop of color to the salad. Other options to consider are fresh strawberries, blackberries, raspberries or sugar-free cranberries, if you can find them.
Walnuts: You can also use sunflower seeds, pine nuts, slivered almonds, pecans or pumpkin seeds.
Feta cheese: You want a tangy cheese to help balance the flavor. You can use goat cheese, blue cheese or parmesan, instead of the feta.
Red Cabbage: Feel free to experiment with adding other veggies. Green onions or finely chopped spinach are great options.

Can I Make This Salad in Advance?
You can make this salad up to several hours in advance, but check out these other time-saving tips:
- Prepare vinaigrette in advance: If you’re making this salad for Easter or other special occasion that require you to be tied up, you can make the maple vinaigrette the night before. Just store in it in the fridge overnight, then about an hour before you’re ready to drizzle it over your salad, set it out to warm up to room temperature. Give it a vigorous shake and add it to your salad.
- Shave the Brussels sprouts in advance: For a huge time-saver, you can also shave the Brussels sprouts the night before. Just shave them, add them to an airtight plastic bag and store in the fridge. They’ll stay fresh for a couple of days.
- Slice up the red cabbage in advance: Wash, dry and thinly slice up your red cabbage will also help you save time. Store the sliced cabbage in a food storage bag until you’re ready.
- Toast the walnuts in advance: Simple toast them in a skillet prior to making the salad, then store them in an airtight container at room temperature until you are ready.
Are Brussels Sprouts OK for Keto? How High in Carbs are Brussels Sprouts?
They are an excellent choice for Keto or just about any diet for that matter. On top of being low in carbs, Brussels sprouts are also packed with amazing nutrients like protein, iron potassium and vitamin C.
There are 8 grams of total carbs in one cup of raw Brussels sprouts. They have 3 grams of fiber making the net carbs in Brussels Sprouts to come in around 4 grams.
What is the Best Way to Shave Brussels Sprouts?
By far the easiest method is with the mandolin slicer. It gives Brussels a nice restaurant quality evenness. Another safe way is to use a food processor, but you have to make sure you use the right attachment. You want them thinly sliced and not minced up.
You can also use a sharp kitchen knife, which takes a little patience, and the slices are not going to be perfectly even. But it will work if that’s all you have on hand.
