🔪 How to Make Smash Burger Pizza Tacos
Divide the Italian sausage into 8 equally sized pieces, about 2 ounces each and roll them into balls.
Place one on a piece of parchment paper and place a tortilla over the top, making sure it’s centered.
Using a smash burger press (or spatula and meat tenderizer) push down on the tortilla until the sausage is completely flat and covering the entire tortilla. Flip it over and repeat with the remaining sausage and tortillas.
Heat a large skillet to medium and place them sausage side down. My skillet was able confit 3 at a time, so you can work in batches.
Cook until the sausage has browned then flip over and remove the skillet from the heat.
Spread 1 tablespoon of the pizza sauce over the sausage.
Add some mozzarella cheese and 3 pepperoni slices on top.
Return to the heat and cover with a lid. Continue cooking until the tortilla is golden and the cheese has melted.
Top with a pinch of the dried oregano and serve.
☑️ Storage Instruction
I prefer these taco freshly made, but you can tore leftovers in an airtight container for up to 3 days. I recommended reheating in a skillet for best results.
If you want to freeze them, wrap the cooled tacos tightly in a layer of plastic wrap and then a layer of foil, then freeze up to 2 months. You can reheat them from frozen in the oven.
🍴 What to Serve with Pizza Taco Smash Burgers
These burger are filling enough for a complete meal but they also pair well with a simple salad with Caesar Salad Dressing for extra veggies.
💡 Tips
- Warm your tortillas briefly in the microwave to make them more flexible.
- Shred your own mozzarella instead of using pre-shredded because it’s creamier and sticks better to the sausage.
- Use a cast iron skillet or heavy bottom skillet if you have one. It holds heat evenly and gives the best crisp edges.
- For serving, set up a “taco bar” with extra toppings like fresh basil, olives, or crushed red pepper.
- A pizza cutter works great for slicing these tacos cleanly if you want smaller portions for kids or appetizers.
🔄 Substitutions and Additions
- Beef: Swap the Italian sausage for ground beef or ground turkey for a lighter option.
- Veggies: Add sautéed mushrooms, onions, or peppers for extra flavor.
- Heat: Sprinkle red pepper flakes for a touch of heat.
- Herbs: Top with fresh basil, parsley, or oregano before serving for a fresh kick.
- Peppers: Add jalapeños or banana peppers for a tangy, spicy bite.
What Size Tortillas Should I Use?
Street taco-sized tortillas are best since they’re small and easy to press flat.
Can I Make These Ahead of Time?
Yes, you can prep the sausage-tortilla bases earlier in the day and cook them when ready to serve.
How Do I Keep the Tortillas Crispy?
Cook them over medium heat and avoid adding too much sauce so they don’t get soggy.
Do I Need to Oil the Skillet?
No, the sausage provides enough fat to cook without sticking, but a light spray can help.
