Who doesn’t love chicken spinach artichoke dip!?  It’s been one of my favorites for many years and was the inspiration for this casserole.  I take my traditional recipe and add shredded chicken to it, along with some heavy cream.  

I bake it in the oven with plenty of shredded mozzarella cheese on top and bake until it’s golden and bubbly!  And I think we all know picking off that cheese is the best part, right!? Also be sure to try my classic cold Spinach Dip!

This is honestly one of my favorite Keto chicken casseroles now!  It’s great for meal prepping because it freezes beautifully and makes 8 servings.  The taste is so amazing, even your non-Keto family is sure to love it.  

I made this super easy to put together using cooked chicken (you can use rotisserie), frozen spinach and artichokes in the jar.  My Spinach Artichoke Chicken Casserole is a great Keto dinner made in 30 minutes!

🔪 How to Make Spinach Artichoke Chicken Casserole

Preheat oven to 375°F.

Add the cream cheese, sour cream, heavy cream, mayonnaise, garlic, salt and pepper to a large mixing bowl and mix until combined.  

Then add in the rest of the ingredients, except for the mozzarella cheese.  

Mix well, then pour into a 9″ x 13″ baking dish that has been sprayed with nonstick spray. 

Top with the shredded mozzarella cheese and bake for 20 minutes.  

Increase the temperature to 400°F and bake for another 5 minutes or until the cheese is slightly golden and bubbly.

Allow to cool slightly before serving.

Store leftovers in the fridge in an airtight container for a few days or freeze.

🍴 What do you serve with spinach artichoke chicken?

Because this is a fairly hearty and filling casserole, you’ll want to add something light on the side like this Caprese Salad or this Greek Salad. Most any other side could be too heavy.

💡 Tips for the best Artichoke and Chicken Spinach Casserole

  • Save yourself some time and use rotisserie chicken. While you can certainly poach or roast your own chicken, it’s really not worth the extra effort.
  • Using frozen spinach is also a real time-saver, just be sure to completely squeeze all the water out, otherwise your casserole will end up watery and no one wants that.
  • Grate your own mozzarella cheese whenever possible, as the pre-shredded store bought bags have anti-caking ingredients that aren’t great for Keto.
  • Be sure to mince the garlic small enough so no one is biting into a huge hunk of garlic.
  • Don’t skip spraying your casserole dish with some olive oil, otherwise cleanup could become difficult with all the cheese sticking to it. If you’ve ever forgotten to do this, you know exactly what I mean!

🔄 Substitutions and Additions

  • The artichoke hearts that I used were in a jar, plain, not marinated.  You can use either canned or frozen (thawed), whichever is easier for you, just be sure to rinse them first.
  • If you are a fan of mushrooms, this casserole is perfect to add them into. Mushrooms are not traditional in spinach artichoke dip, but they are so tasty and very good for you. Just be sure to sauté them first.
  • If you want to add more bulk to this casserole, you can mix in some cauliflower rice. If you do this, using the frozen and thawed kind is ideal, provided you pat it dry so it doesn’t add too much moisture to the casserole.
  • If you don’t have mozzarella cheese, you can use another mild-tasting cheese like Monterey Jack. I’d stay away from cheddar, although it’s a tasty cheese, it just wouldn’t so well in this casserole.
  • If you don’t have sour cream, you can substitute with a full fat Greek yogurt.
  • Mascarpone cheese can be used instead of cream cheese and though is lacks the same tang, it’s very mild in flavor and has the same exact texture, making it an ideal sub.

The main and key ingredients are of course, chicken, spinach and artichokes, but also a combination of cheeses to give it lots of flavor and creaminess. In this recipe, I use mozzarella cheese, cream cheese and parmesan cheese.

What’s the best cheese for spinach artichoke chicken?

The main cheese that is typically used is mozzarella cheese, but as I mentioned above, I use a combination of 3 different cheeses to give it even more flavor.

What is the million dollar chicken casserole recipe?

Chicken, cream cheese and a cracker topping. Since this is a Keto friendly recipe, we forego the cracker topping and instead add a nice cheesy mozzarella topping.

Ingredients
 

  • 4 cups cooked chicken, shredded/chopped
  • 9 ounce package frozen spinach, thawed and well drained
  • 14 ounces artichoke hearts (plain), chopped
  • 8 ounces cream cheese, at room temperature
  • 1 cup parmesan cheese, grated

  • 2/3 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 cup mayonnaise, see my recipe
  • 3 cloves garlic, minced

    Made this last night and we all loved it! My husband and son both said it was cleared to go in the rotation LOL. We are all mushroom lovers so added some that were chopped and sauteed, which worked well in the recipe.

    1. Hi! You sure can. Just assemble everything in the baking dish, cover it well, and refrigerate overnight. Take it out about 20 to 30 minutes before baking so it has time to warm up a bit, then bake as written.

    1. Sure, a standard 10-ounce box of frozen spinach is equivalent to 1 ½ to 2 cups once thawed and drained. To replace it with fresh spinach, use about 6 to 8 cups of fresh spinach, as it wilts down significantly when cooked.
