I realize that it’s easy enough to whip up some heavy cream, toss in some strawberries and call it good. But with a few extra quick and simple steps, you can turn an average dessert into something pretty special!

I start by chopping up fresh strawberries and macerating them with a Keto friendly sweetener. Why do that, you ask? Because as the strawberries sit, they start to give up their juices and create this glorious syrup!

How to Make Strawberry Fool

Place a mixing bowl in the freezer, while you wash, hull and dice the strawberries.

Add the strawberries to a mixing bowl, then pour the lemon juice and 1 tablespoon of monk fruit/allulose over the strawberries.

Toss to combine and let them sit at room temperature for 20 minutes or until the juices are drawn out of the strawberries.

Remove the bowl from the freezer and pour in the cold heavy cream.  Whip using a hand mixer until you get soft peaks. Slowly pour in the remaining monk fruit/allose and vanilla extract as you continue whipping until you get stiff peaks.

Slightly mash the strawberries. Pour half of them into a mini chopper and puree, making sure to leave some small chunks. Set the other half of the mashed strawberries aside for the topping.

Take half the whipped cream and add to another bowl.  Fold the puréed strawberries into the whipped cream, leaving some streaks.

Take your serving glass and add a layer of the whipped cream.  Add a layer of the strawberry whip cream mixture on top.

Top with some of the reserved mashed strawberries and serve.

What Cream Goes with Strawberries?

Strawberries pair well with many different types of cream, including sour cream, cream cheese, mascarpone and of course heavy cream. Heavy cream is used in this dessert because it makes for a super light and almost mousse-like texture that is heavenly.

Are Strawberries and Whip Cream Keto Friendly?

Most definitely! Strawberries are loaded with vitamins and minerals and heavy cream is a great source of healthy fats and has very few carbs.

What is a Strawberry Fool?

It’s a simple dessert that traditionally consists of strawberries, sweetner and whipped cream. The strawberries are tossed in the sweeter and macerates until the they give up their natural juices.

They are them folded into heavy cream that has been whipped to stiff peaks with sweetner, and in this recipe, some vanilla extract for a little extra flavor. You’ll also want to leave some streaks of the juices peeking through.

How Do You Serve Strawberries and Cream?

There are several ways to serve it. In this recipe, I layered whipped cream with the strawberries/whipped cream mixture and topped with some of the macerated strawberries in a glass.

Alternatively, you can add more layers of the strawberries and cream mixture, whipped cream and macerated strawberries. Or you can skip the layers all together and serve the strawberries and cream mixture all on it’s own.

More Ways to Use Keto Strawberries and Cream:

  • Serve it to your dinner party guests layered in shot glasses, which will look really pretty.
  • Cut up some pieces of Keto pound cake, and layer with the strawberries and cream for a quick and easy trifle.
  • Add some of the strawberries and cream mixture to a bowl, add in some Keto friendly granola and alternate layers with the macerated strawberries.

Are Strawberries OK on Keto?

Recipe Notes

I highly recommend using monk fruit/allulose in this dessert, because it doesn’t have a cooling effect. 
If you don’t have the monk fruit/allulose blend on hand, you can use powdered monk fruit or Swerve confectioners as a 1:1 substitution. 
If you substitute with powdered allulose, use 7 tablespoons instead, since allulose isn’t as sweet as monk fruit.
