One of the things most people on Keto really miss is bread, garlic bread, rolls, sticks, etc. And there are some very decent Keto friendly recipes out there using almond flour or other low carb nut flours.
When I got my new Dash Mini Waffle Maker, I wanted to try some savory chaffle recipes that would be a great low carb substitute.
First, I made the base recipe, then decided to cut them into sticks to mimic breadsticks and dipped them in my Marinara Sauce. They were delicious!
Then I made another batch to use as a "bread" for a sandwich. I added uncured ham, salami, lettuce and roasted red pepper. Turned out REALLY good with tons of flavor!
But my absolute favorite way to eat these is bruschetta style! I take fresh cherry tomatoes, mix in olive oil, fresh basil and a pinch of salt and served over the top and WOW, so good!!
What's in the Chaffles Recipe
Base Keto Chaffle Recipe
- Mozzarella cheese
- Egg
- Grated Parmesan cheese
- Italian Seasoning
- Garlic powder

How to Make Parmesan Garlic Chaffles
Turn on your Mini Dash or other waffle maker and allow it to get hot.
Add in all the ingredients, except for the mozzarella cheese to a bowl and whisk. Add in the cheese and mix until well combined.
Spray your waffle plates with nonstick spray and add in half the batter to the center. Close the lid and cook for 3-5 minutes, depending on how crispy you want your Chaffles.
And that's it! How easy is that?
To serve, there are a couple of options. One is to serve with a drizzle of olive oil, grated Parmesan cheese and fresh chopped parsley or basil, along side your favorite Italian dish.
Variations of Chaffles Recipe
Italian Keto Chaffle Sandwich
Prepare the base recipe as noted above. Add your favor cold cuts, lettuce, tomato, whatever you like. I added uncured ham, salami, lettuce and roasted red pepper.
Chaffle Keto Breadsticks
Prepare the base recipe as noted above. Cut each chaffle into 4 sticks and serve with a side of Low Carb Marinara Sauce.
Low Carb Chaffle Bruschetta
Prepare the base recipe as noted above. Mix together 3-4 cherry tomatoes, chopped, ½ teaspoon fresh basil chopped, splash of olive oil and a pinch of salt. Serve over the top of the chaffles as prepared above.
What is a Chaffle?
By now, you might have heard of Chaffles, they're relatively new, but have already become so popular! There are many different variations out there that are really worth trying out.
Chaffles take very little effort and in the classic recipe, only 2 ingredients to make: ½ cup shredded cheese and 1 whole egg. Easy peasy!
This is what the classic Chaffles looks like. I added my favorite Kerry gold butter and Sugar-Free Maple Syrup. If you've never made them before, I think you'll be pleasantly surprised, just as I was and believe me, I was skeptical!
You can add just about anything to the mix, provided that it doesn't absorb all of the egg, because it would completely change the texture.
I recently came out with a pumpkin version that's really tasty, full of pumpkin flavor and such a treat! I topped them with Sugar-Free Maple Syrup, chopped roasted pecans, a dusting of ground cinnamon and homemade whip cream. Definitely worth trying!
What are some different ways to eat Chaffles?
The classic version can be used as bread for a regular sandwich, perhaps put some egg salad, with lettuce and tomato? Or how about a BLT? YUM!! You can use in place of biscuits and make sausage gravy, now we're talking!
You can also use over Eggs Benedict, which is a personal favorite of mine! I've even seen them used a hot dog buns, so perhaps a sub for hamburger buns as well. If you use it as a replacement for bread, the possibilities could be endless.

What do you need to make a Keto Chaffle?
Mini Dash or Similar Waffle Iron
I use my Dash Mini Waffle Maker, which I ordered on Amazon, but I've also seen them locally at TJ Maxx. You can order them from a number of stores online and since they've become so popular lately, it they won't be hard to find. They're also really inexpensive, I only paid $9.99 for mine, but I've seen them for $8 too! Not to shabby, right!?

A Really Good Base Mix
For this Chaffle recipe, I used garlic salt, Italian seasoning, olive oil and parmesan cheese to give them that classic garlic bread flavor. If you don't have an Italian seasoning mix, you can use a mixture of dried oregano, basil and parsley.
If you don't have Parmesan cheese, you can use fresh grated Romano or Asiago and they'll still taste great!
And Endless Possibilities for Toppings
I added some additional grated Parmesan cheese over the top, along with a healthy drizzle of extra virgin olive oil (you want the good flavorful stuff for these) and some chopped basil. Using fresh basil is almost a must in this, but if you absolutely need to sub, you can use a combination of fresh parsley and a very small amount of dried basil.
To make my sandwich, I added ham, salami, roasted red pepper and lettuce. It honestly didn't need anything else, it had plenty of flavor already. And it definitely didn't need more cheese, since the "bread" is made mostly of cheese!
For the bruschetta, as mentioned in the ingredients list, fresh cherry tomatoes are what I used. You can use Roma, plum, grape or any other tomato that you like. I would not use canned on this, you really want them fresh.
For the Breadsticks version, I served with my Quick & Easy Marinara Sauce. Alternatively, you can use any Low Carb/Low Sugar marinara sauce that you like.

FWIW, I love this recipe, but I made 1 change.... I'm NOT a big fan of italian spices, almost ANY recipe I make I at least 1/2 the spices (depending upon what else is going on in the recipe) I love garlic tho so I did not chage that, but the 'Italian Spices' I took WAY down to 1/4 t. for ME it was PERFECT, but I'd suggest trying 1/2t 1st (if not the whole 1t) unless you really dislike the strong flavor as I do. If I had not been dipping in sauce... probably would be going w/ 1/2t myself, but the sauce has Italian spices in it... so.... I figured 1/4 would be good & it was... also, I think I might use this to make my "crust" for pizza then I just need pizza sauce, cheese, toppings I want & the air fryer for "cooking" it 🙂 Once I try it w/ the 1/2t I'll amend this post.

I am so glad you tried it and was able to tweak it to suit your tastes. Being Italian and creating this recipe as a nod to Italian style herbed bread, the herbs are important. But, as you discovered, it's a super versatile recipe. Perfect for anyone's tastes.

I’m very concerned about the amount of Italian Seasoning used for too waffles. 1 teaspoon would be extremely over powering. Is this a typo or has anyone really tried using the full amount?

The 1 teaspoon is correct and isn't overpowering. These Chaffles are meant to taste like garlic bread or rolls, so the flavor needs to be a little bold. You are certainly welcome to use less and see how you like them.

No, the recipe makes 2 chaffles, so that's all you'll need for the sandwich.

I don't have a waffle iron and would like to make some tonight.. do you thing that these could be fried like a pancake to use for a sandwich?

I believe it will work, and if you can put a lid over the skillet, that might help it cook better. Then flip and cook a little longer.

These look fantastic, however. all I have is a standard size Belgian waffle maker. Would I pour the entire batter in there?

You might need to double up on the batter and cook them a little longer, but it should still work 🙂

That worked, I doubled the recipe and just took it out after it stopped steaming and the light went out. I didn't time it. Now to make my sandwich.
