These biscuits are amazing! They are a bit of a nod to the famous cheddar bay biscuits that we all know and love, but honestly, I think these are better because they have BACON!!!
Uncured bacon crumbled into soft and fluffy biscuit dough, smoky bacon cheddar cheese and even a little bacon grease makes these incredibly flavorful!
These are a great Low Carb biscuits that even those who aren't on Keto will love!
What's in Keto Bacon Cheddar Drop Biscuits
- Almond Flour
- Bacon
- Eggs
- Sour cream
- Bacon grease
- Grass-fed butter
- Cheddar cheese
- Smoky bacon cheddar cheese (or any cheddar cheese)
- Swerve confectioners
- Garlic salt
- Onion powder
- Dried parsley
- Baking powder
- Baking soda

How to Make Almond Flour Drop Biscuits
Preheat the oven to 425F.
Add the almond flour, baking powder, baking soda, swerve, onion powder and garlic salt to a bowl and mix using a hand whisk or fork.
In another bowl, add the eggs, bacon, sour cream, parsley, bacon grease and melted butter and mix until combined.
Add the cheese into the wet ingredients and continue mixing.
Add the dry ingredients into the wet and mix.
Scoop the biscuit mix onto baking sheet lined with parchment paper or a Silpat and bake for 12-15 minutes.

Ingredients
- 1½ cups Almond Flour
- 4 strips of bacon, cooked and crumbled
- 2 eggs, beaten
- ½ cup sour cream
- 1 tablespoon bacon grease, melted
- 3 tablespoons grass-fed butter, melted
- ⅓ cup shredded cheddar cheese
- ⅓ cup shredded smoky bacon cheddar cheese
- ½ teaspoon swerve confectioners, or powdered erythritol
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
- 1 tablespoon dried parsley
- 1 tablespoon baking powder
- ½ teaspoon baking soda

I found these biscuits very tasty but I, too, had trouble with them not rising very much
I'll experiment with the recipe to see if i can tweak it a little more. Otherwise it was very good.

They don't rise a ton, but they will hold their shape much better if you use a muffin pan or silicone muffin cups.

Hi, I tried this recipe and my biscuit fell flat. It did not rise. Please what could be the cause as I used baking powder and soda which has not expired.

I made this recipe and fell in love with the look. unfortunately I used a different sweetner and it ruined my biscuits. Do you have to use the sweetner? I want to keep this recipe. I know its amazing minus the sweetner. love the texture of the biscuits

So sorry to hear that! I'm not sure what sweetener you used, but I used Swerve Confectioners and it worked perfectly. So maybe give that a try next time and they should turn out for you 🙂

I've been making these delicious 'muffins' regularly for the past year. I loved the original, but for everyday purposes, I omit the bacon and use all butter. I wrap and freeze them separately, then pop one into the toaster when needed!

Best Keto biscuit recipe ever! I've been gluten free for 8 years now so maybe I'm used to a different texture when it comes to bread products, but this biscuit has such a wonderful texture and flavor I can't get over it. I just finished my second batch and it came out perfect again. Last week it was my saving grace as my "grab and go" breakfast every day and even worked as crouton on a chicken salad (cut in half and put in toaster). My batter was very wet and the biscuits did not rise. I doubled checked and did not forget any ingredients. Any idea what could have gone wrong? 🙁

I'm not sure what could have gone wrong, honestly. Is your baking powder fairly new? Older/expired baking powder might cause that, but I can't think of anything else that could be the culprit. Sorry they didn't work out!

Best biscuit I've eaten! They really are amazing! I didn't have the smoky cheese so I added a few drops of liquid smoke. I made a 1/2 recipe and had 6 generous biscuits. Thanks for the great recipe.

No, it's not a misprint, swerve 1/2 teaspoon of swerve confectioners in the mix. I've added it as part of the dry ingredients. Sorry for any confusion and thanks for letting me know!
