Keto Bacon Wrapped Green Beans

An elegant Keto side dish to serve at your next special occasion or holiday dinner!  Green beans wrapped in bacon, with a brown sugar like topping! Yum!

The bacon gives them a salty bite, then they're brushed with a sugar-free brown sugar-like topping and baked until golden and delicious!

If you're looking for a Keto side dish to serve at a special dinner, maybe you're hosting some friends or having a holiday meal at your house, these are just what you need!  These little bundles look really pretty all lined up on a long platter and will certainly impress your guests!

Fresh green beans are blanched, then roasted in the oven with bacon wrapped around the center.  During the last few minutes of baking, they're brushed with a Keto friendly brown sugar mixture that gives them a hint of sweetness!

When holidays come around, these will be a wonderful addition to your dinner table! But, don't wait for the holidays! They are perfect anytime of year.

What's in Bacon Wrapped Green Beans

  • Green beans
  • Uncured bacon
  • Bacon grease
  • Brown Swerve
  • Dried thyme
  • Salt

How to Make Bacon Wrapped Green Beans

These low carb green bean bundles are so easy to make and require just a few steps.  Start by preheating your oven to 450F.

Then add some salt to a large pot of boiling water.  First you'll blanch the green beans, then roast them in the oven to finish cooking.

Take fresh green beans that have been washed and trim the ends off, then boil them for 5 minutes.

While the green beans are boiling, fry the bacon in a large skillet, but don't cook it all the way through.  You want them to still be pliable, so you can wrap them around the green beans, and they'll continue cooking in the oven.  Reserve 2 tablespoons of the bacon grease and set it aside.

After 5 minutes, plunge the green beans into a iced water bath, to stop them from cooking any further and sets the bright green color.  It also allows them to cool down some, which makes them much easier to handle them.

Divide the green beans into 8 batches, with 8 green beans in each batch. Gather a batch of the green beans together, all lined up nicely, then take a slice of the bacon and wrap around the center.

Leave both ends of the green beans exposed and place the bundle with the bacon's seam side down on a baking sheet lined with a rack. I put foil under mine, to help with cleanup!

Bake for 10 minutes, while you mix together the Brown Swerve and bacon grease.

After the bundles have baked for 10 minutes, brush the mixture over each bundle, sprinkle the thyme and a little salt on over the tops.  Continue baking for another 4-5 minutes or  until the bacon is cooked through and crispy.

Serve on a long rectangular platter with the bundles all lined up and garnish with more dried thyme. If you don't have a long platter, you can pile up the bundles on any platter that you have.

Store leftovers in the fridge for a few days or freeze.

Tips for Making Keto Bacon Wrapped Green Beans

Can You Eat Green Beans on Keto?

Certainly!  They're actually one of the best low carb Keto friendly vegetables!  They're incredibly healthy and contain folate, fiber, Vitamin C, A and are loaded with potassium!  Read more about the health benefits for green beans in this article.

Fresh traditional green beans were used in this recipe.  If you wanted to, you could use the Haricots Vert green beans, those are the more petite, slender beans, but you'll want to adjust your cooking times down a bit.

Alternatively, you can use frozen green beans, thaw them out and skip boiling them in water.  Then continue with the instructions after wrapping them in bacon.  Using the frozen green beans will also be a great time saver!

There are only 3.6 net carbs in green beans per cup!

Is this a Make Ahead Keto Side Dish?

Yes, you could absolutely make these ahead of time if you needed to!  To do this, follow all the instructions up until you bake the bundles.  Save your bacon grease and pop it in the microwave to heat it back up when you're ready.  Then mix in the Brown Swerve and it will be ready to glaze the green beans with.  

If you can't find Brown Swerve, you can use any sugar-free brown sugar substitute that you can find.  Brown Swerve is really easy to find now though, they even carry it at Walmart, which is so convenient!  

If you're concerned about having a whole bag of it and nothing else to use it for, not to worry!  There are so many Keto desserts that you can use it in like Pumpkin Coffee Cake, Mixed Berry Crumble, Easy Homemade Caramel, Pecan Praline, Chocolate Chip Cookies and so much more!  If you've never used it before, you will be pleasantly surprised by it because it tastes, smells and feels exactly like regular brown sugar!!

What Kind of Bacon is Good For Keto?

The bacon that I use is uncured, so it contains no nitrites, nitrates or other unhealthy additives.  You'll also want to make sure it doesn't continue hidden carbs in sugar, as so many varieties of bacon do.  

Be sure not to cook the bacon too much, because if it's too brittle, it won't wrap nicely around the green beans.  But don't worry, it will crisp up when you bake it!

INGREDIENTS

  • 1 pound fresh green beans, 64 green beans
  • 8 slices uncured bacon
  • 2 tablespoons bacon grease
  • 1 tablespoon Brown Swerve
  • 1 teaspoon dried thyme
  • Salt to taste

INSTRUCTIONS
