How to Make Keto Chocolate Fudge
Heat a saucepan to medium heat and add in ½ cup of butter. Once the butter has melted, add in the sweetener and heavy cream.
Lower the heat and simmer for 15 minutes or until the mixture has reduced and thickened enough to coat the back of a spoon.
Turn off the heat and mix in the vanilla extract and peanut butter.
Stir until the peanut butter has melted.
Pour the mixture into an 8 x 8 glass baking dish lined with parchment paper and spread into an even layer using an offset spatula.
In a small microwave safe bowl, add in the chocolate chips and remaining 2 teaspoons of butter.
Heat in the microwave (or over a double boiler) for 30 seconds, remove and stir. Repeat the process until the chocolate has melted.
Dollop the chocolate over the peanut butter mixture.
Using a butter knife, swirl the chocolate around.
Chill in the fridge for at least 2 hours or until fully set before cutting into squares. Store leftover in the fridge.
You sure can! Wrap the chilled fudge in a double layer of plastic wrap and then slip it down into a freezer safe ziploc bag. It will stay fresh for up to a couple of months in the freezer. To thaw it out, unwrap it and place it in the fridge overnight.
What Causes Peanut Butter Fudge not to Harden?
Make sure you are allowing the butter and sweetener mixture to cook long enough to really coat the back of the spoon well.
This fudge needs to completely cool before slicing it. I know it's hard to wait. But trust me. it will be worth it!
Is Peanut Butter Keto Diet Friendly? Will Peanut Butter Break Ketosis?
From a micronutrient standpoint, peanut butter in moderation is just fine and should not knock you out of ketosis. The key to enjoying it on Keto is to make sure you are using a high quality brand that is sugar-free.
I use Crazy Richard's because it contains only one ingredient on the label…PEANUTS! Because you are using all Keto friendly ingredients, this Keto fudge only have 3 net carbs per serving, making it a delicious, sweet indulgence you won't have to feel guilty about.
Keto Chocolate Fudge Add-ins and Variations
Crunch: If you want to add a little crunch to your fudge, you can use crunchy peanut Butter or add in some of your favorite toasted nuts. Pecan, walnuts or additional peanuts make a great choice.
Chocolate: I used semi-sweet chocolate chips for this fudge, but if you prefer dark, white or milk chocolate you can certainly use your favorite chocolate.
Sweeteners: Some sugar substitutes have sort of a cooling effect, which is why I use this monk fruit/allulose blend. I've had great success using it in many recipes. But if you want to use Swerve Confectioners or Powdered Monk Fruit, it will still taste amazing.
